Alright you guys, I really cannot get enough of The Springs. If you’re in L.A. or ever passing through, you just absolutely have to go. I’m telling you now so you can plan ahead of time. It’s the most amazing raw, vegan restaurant I’ve ever been to and I took my mom there when she was in town last weekend. She’s definitely not vegan but loved the food so much we went back twice! That’s how you know it’s the real deal.
We started with the reuben sandwich which was actually my mom’s pick.
I’ve never even had a regular reuben before, so I was completely blown away. They made a caraway “rye” bread (not really bread because it’s raw, vegan, & gluten-free of course) and topped it with marinated mushrooms, thousand island dressing, sauerkraut, and dill pickles.
To be honest, I don’t even really like mushrooms, at least I thought I didn’t. Plus I’d never tried sauerkraut or thousand island dressing before either. So boy was I surprised in the best way possible! The flavor was top notch. I can’t believe I’m saying this but they’ve definitely converted me into a mushroom fan that’s how much I liked them.
Then, there was the gigantic nacho salad.
The Springs is known for their delicious, large, super satisfying salads and you can’t go wrong with Mexican-inspired food. They mixed romaine lettuce with some yummy nacho cheese sauce, taco crumble, and tortilla crisps for the base. Then on top you have the pico de gallo, cashew sour cream, and guacamole. I definitely mixed it all up and got it messy because that’s the way I roll. It was superb!
I couldn’t help myself y’all. As if one salad wasn’t enough, then came the falafel salad. Just when I thought the food couldn’t get any better, it did. They made raw falafel and za’atar crackers, put them on a bed of romaine and mixed greens, then added in quinoa tabouli and harissa. But the best part? The creamy tahini dressing. It’s all about the sauces and dressings in my opinion.
What really makes The Springs special is their food is such a work of art. Their plating is absolutely beautiful and such detail goes into it. I’ve never seen food that looks so pretty, tastes amazing, and is so unique and flavorful. It really is the full package. I’ve interviewed the owner Jared Stein before and their whole philosophy revolves around making people feel whole and nourished and that’s exactly how I felt when I left.
Of course my sweet tooth wouldn’t let me leave without getting the “ice cap” smoothie.
It’s the perfect blend of banana, spinach, almond milk, vanilla, mint & cacao nibs. So minty and refreshing! Needless to say I am over the moon about The Springs. And guess what? Exciting news! I’m hosting a vegan blogger meet-up there this Saturday. We’ll get a special preview of their new 7-course chef’s tasting menu. A bunch of my friends and even some vegan bloggers I’ve never met are coming to enjoy the food, some live music & each other’s company. I literally can’t wait so stay tuned and I’ll let you know how it goes!
