No-bake Banana Oat Cookies

The cookie monster is coming out to play! I have a serious obsession with cookies, cookie dough, and basically anything with bananas in it. I’ve made vegan banana oatmeal breakfast cookies before. However, this time I came up with a raw vegan version that requires no baking and no mess. All it takes is 5 minutes, a blender or food processor, and a couple of simple ingredients and you’re good to go. These raw banana date oat cookies make the perfect healthy snack, plus they’re vegan, gluten-free, nut-free & oil-free!

Even though these cookies are raw, you do not need a dehydrator to make them.

All you have to do is combine the ingredients, roll them into balls, and stick them in the freezer. Since I don’t own a dehydrator, I can’t make a lot of raw vegan recipes which require one. I decided to solve this problem by making a more accessible raw cookie recipe that everyone can make at home! I really have nothing to compare these cookies to, because I’ve never tasted anything quite like them.

They are sticky, naturally sweet, and completely delicious.

I had my boyfriend taste test these and he asked me if I could make him more. To be honest, I wasn’t sure exactly how I ended up with them. I was just experimenting in the kitchen with some of my favorite ingredients: frozen bananas, dates, and rolled oats.

I was definitely up for the challenge and after some more experimenting, came up with more delicious banana oat cookies. After wild approval from my boyfriend, I knew I’d nailed it. You could eat these on their own like I did. Alternatively, you could dip them into some oat milk or almond milk, scoop some banana ice cream in the middle to make ice cream sandwiches, or even layer them with peanut butter or jam.

When it comes to these cookies, I definitely had no problem finishing them off in just a couple of days. Almost all the cookie recipes I’ve seen call for tons of coconut oil or nut butter. Not only does this get pricy, but also it means they’re very high in fat. These cookies are great low fat alternative that’s super tasty as well.

No-Bake Banana Oat Cookies

Chewy, delicious raw vegan banana oat cookies! A really healthy dessert or snack ready in 5 minutes, no baking or dehydrating needed.

Ingredients

  • 3 cups gluten-free rolled oats
  • 1 ½ cups pitted Medjool dates
  • ½ cup sliced banana frozen
  • ¼ cup coconut nectar
  • 3 tbsp coconut sugar
  • 1 tbsp cinnamon

Instructions

  • Add your rolled oats, dates, cinnamon, and coconut sugar to a high-speed blender.
  • Blend on high until all ingredients are well combined and broken down into small pieces.
  • Transfer mixture to a food processor.
  • Add in coconut nectar and frozen banana slices.
  • Pulse until mixture is well combined and sticky.
  • Scoop mixture out and place on a cutting board.
  • Roll into tablespoon-sized balls between your hands.
  • Place balls on a cookie sheet lined with parchment paper.
  • Flatten down balls into cookies using your hands or the back of a spoon.
  • Place in the freezer for 1 hour to firm up.
  • Enjoy!

    These look delicious! Unfortunately I don’t have coconut nectar or sugar. Could I use honey or maple syrup? Thanks 🙂

      Hi Anna! I’ve used maple syrup before and they turned out delicious 🙂 So any liquid sweetener would work! I recommend adding a couple of more dates too if you don’t have coconut sugar. I hope you like them!

    I love cookies! I could live only on cookies. And maybe cake. But cookies are by far my favourite. Love to have a healthy option. I don’t have a dehydrator either so it’s nice to find a recipe that needs none. I will make and freeze them to have a healthy breakfast on the go. Thanks for sharing the recipe.

      Me too! I try to make everything as simple as possible, so it’s no hassle and minimum mess 🙂 Plus they still taste delicious!
