The bad news is I’m still feeling quite sick. My sort throat is gone, but in its place I now have a horrible head cold and congestion meaning I’m sneezing non-stop. It’s not the most fun. It does, however, mean that I’m still sticking to eating mostly smoothie bowls, banana ice cream, oats, and potatoes. This isn’t too far of a cry from what I normally eat anyways. Today, I’ve blended up this acai bowl with easy 4-ingredient rawnola balls which is my new obsession that I can’t wait to share with you.
The acai craze seems to be everywhere these days.
When I lived in Los Angeles 2 years ago, acai bowls were already the norm, dotting the menu of every juice bar in town. Although Hong Kong tends to be a bit behind picking up on these trends, even now there’s a couple of health spots dishing out acai bowls. So far, everywhere I’ve traveled to I’ve been able to find acai bowls. It’s undeniable: acai is taking over as the new “hot” superfood of the moment.
I remember my first ever acai bowl that I had at Beaming in Santa Monica, as part of a workshop put on by Ksenia from Breakfast Criminals. We had all sorts of toppings to put on them: granola, almond butter, coconut, berries, slices banana, and chocolate chips. It was only a matter of time before I started making them at home. Sure enough, I bought frozen acai from the store and next thing I knew I was as hooked on acai bowls as anyone.
This homemade acai bowl is probably a lot cheaper than the ones at your local juice bar.
I love the unique flavor of acai, which is so unlike any other berry or fruit out there. I made this simply delicious smoothie bowl with only a couple of wholesome, plant-based ingredients. The base is a mix of frozen bananas and acai. Then, I added in a little cinnamon and coconut sugar. Blend it together and there you have it!
To top it off, I like to keep it simple. It’s routine for me to have a smoothie bowl or smoothie in the morning with my go-to rawnola.
I rolled my easy 4-ingredient rawnola into energy balls, which taste just like cookie dough.
The chewy rawnola balls made the perfect topping, so I didn’t add anything else. But have fun with whatever toppings you want! I recommend nut butter + granola if you’re new to acai bowls, or more fresh fruit and shredded coconut if you’re a pro. Acai Bowl with Raw Energy Balls
Ingredients
For the acai bowl
- 4-5 frozen bananas
- 1 frozen acai pack
- 1 tbsp coconut sugar
- 1 tsp cinnamon
- filtered water as needed
For the energy balls
- 1/2 cup gluten-free rolled oats
- 1/2 cup pitted Medjool dates
- 1 tbsp coconut sugar
- 1 tsp cinnamon
Instructions
For the acai bowl
- Process all ingredients in a high-speed blender or food processor.
- Add filtered water a little bit at a time as needed until you get a smooth & creamy consistency.
- Scoop into a bowl.
For the energy balls
- Add all ingredients to a blender.
- Blend on medium, scraping down the sides until the oats are broken down and it’s fully combined.
- The rawnola should stick together when you press it between your fingers.
- Scoop out and roll into small balls between your hands.
- Place balls on top of your acai bowl.
- Enjoy!
