No-Bake Oatmeal Raisin Cookie Bars

Happy Friday lovely people! I woke up in the mood for an oatmeal raisin cookie for breakfast. This actually happens quite a lot, so I came up with these healthy raw oatmeal raisin cookie bars with maple coconut frosting. Yes, I did end up eating them for breakfast and boy oh boy were they super amazing! 

These bars are packed with lots of plant-powered goodness like almonds, dates, almond butter, rolled oats, and raisins.

Oats and raisins have plenty of fiber and the almonds and almond butter add a healthy dose of protein. Eating these will kick-start your morning the right way!

The maple coconut frosting gives these oatmeal raisin cookie bars just the right amount of natural sweetness. It compliments them perfectly. Because what else would you want to have with oatmeal raisin cookies besides frosting right? They’re full of nutrients, completely raw, vegan, gluten-free, and refined sugar-free. Sweetened only with dates, cookie bars don’t get much healthier than this. 

Cookie bars for breakfast = best idea ever!

I run every morning before work, have to take my dog out, and then have to get ready and go. So I usually only have time for a quick breakfast and these make the perfect on-the-go treat. They’re a hybrid of oatmeal, a granola bar, and cookies all in one. Of course, you could always save them for dessert or an afternoon snack. I just didn’t have the patience. I gobbled them all up within a matter of days.

I’ve been really into making raw vegan treats lately so you can expect more to come! They’re just the best in my opinion. So satisfying, made with all whole foods, and naturally sweet with no added sugars. Make these oatmeal raisin cookie bars and you’ll see what I’m talking about! Seriously they’ll make your weekend absolutely fantastic. 

Holy wow these are a million times better for you than the packaged bars or cookies you can get at the grocery store! They left me feeling strong and happy, so I hope you enjoy them as much as I did.

No-Bake Oatmeal Raisin Cookie Bars

Ingredients

For the cookie bars

  • 2 cups rolled oats
  • 2 cups pitted dates
  • ½ cup almonds
  • ½ cup almond butter
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • tsp salt
  • 1 cup raisins

For the coconut frosting

  • cups coconut butter
  • ½ cup maple syrup
  • 2 tsp vanilla extract
  • 3-4 tbsp water

  • Instructions

For the cookie bars

  • Add oats and almonds to a food processor and process.
  • Add in dates, almond butter, vanilla, cinnamon, and salt and process until fully combined.
  • Transfer to a medium bowl and mix in raisins.
  • Press cookie dough firmly into a pan and place in the freezer.

For the frosting

  • In a blender or food processor, combine all the ingredients.
  • Blend on high, adding a little bit of water at a time until smooth.

Assembly

  • Take pan out of the freezer and smooth frosting onto the top.
  • Place in the fridge for 30 minutes to an hour.
  • Slice into bars and eat them.

    I love these! Oatmeal raisin is a classic pairing that I just LOVE <3 And they look absolutely a million times better than any smashed square thing from a package!
