I was sitting there on a normal Wednesday watching the show Love on Netflix. Then, I had a random craving for chocolate chip cookie dough ice cream. Per usual, this particular flavor vegan ice cream simply does not exist in Hong Kong. So, it would not be as simple as strolling to the grocery store to pick some up. It soon sunk in that I would either have to make some myself at home or go without. Instead, I took to the kitchen and came up with these delicious cookie dough energy balls!
I am telling you these balls actually taste exactly like cookie dough!
It’s still crazy to me how such simple plant-based ingredients can make something so delicious. They may taste naughty, but these cookie dough balls are entirely good for you.
I remember as a kid, I used to sneak bites of raw cookie doug My mom would tell me not to. I’d almost always end up with a tummy ache! Thankfully, with these vegan cookie dough balls that’s no longer a worry. Plus, I’m 22 years old so I’m free to eat as much cookie dough as I want.
I ended up eating some of the “batter” after blending it up. This raw cookie dough is perfectly sweet and chewy. It’s everything you want in cookie dough and more! You can roll it into balls, eat it by the spoonful, or throw it into banana ice cream for a sundae.

Cookie Dough Energy Balls
Ingredients
- 1 1/4 cup rolled oats
- 1 cup pitted Medjool dates
- 1 tbsp coconut sugar
- 1 tbsp almond butter
- 3 tsp maple syrup
- 1 tsp vanilla extract
Instructions
- Add rolled oats to a high-speed blender or food processor.
- Process until they turn into a flour-like consistency.
- Add the rest of the ingredients and process until a sticky ball of dough forms.
- Scoop out by the spoonful and roll into balls between your hands.
- Place on a baking sheet lined with parchment paper.
- Let set in the fridge for 1 hour (optional).
