Vegan Cookie Dough Truffles

vegan cookie dough truffles #vegan #dessert #dairyfree

I can proudly say this is my favorite recipe that I’ve made to date. Raw vegan cookie dough truffles made with only 4 healthy ingredients then dipped in a 3-ingredient raw chocolate. These truffles are not only really simple, but also much healthier than any I’ve ever tried. So go ahead and spoil yourself with these decadent treats.

First, you have the raw vegan cookie dough made with these 4 natural ingredients. It’s amazingly chewy, naturally sweet, and so addictive. I’ve always been an advocate of eating raw cookie dough (and usually eat more of the dough than the actual cookies). My mom was definitely NOT a fan of me doing so. But now I’ve come up with a raw vegan version that has no eggs, dairy, or refined sugars so I’d say full-speed ahead with the cookie dough eating.

Then there’s the silky smooth raw chocolate made from coconut oil, maple syrup, and raw cacao powder. If you’ve never tried making your own chocolate before, don’t worry. It’s actually way easier than you think! Plus you even get to lick the bowl after.

This recipe is completely raw, vegan, gluten-free, and refined sugar-free.

My goal was to create a chocolatey dessert without any processed or unnecessary ingredients. I’d say mission accomplished. Truffles do not get much healthier (or tasty!) than this.

I brainstormed the idea for these cookie dough truffles after being bombarded with Easter dessert recipes online. I couldn’t quite find something that was easy to make, bite-sized, and made without refined sugar, dairy, or gluten. Then it hit me, why not make raw cookie dough because who doesn’t like cookie dough?

I came up with a raw vegan carrot cake with cashew cream frosting last week (what’s Easter without a carrot cake right?). However, I also wanted to make a dessert for all you chocolate lovers out there.  So these cookie dough truffles are for my fellow chocoholics.

I definitely gravitate more towards sweet than savory foods, so keep your eye out for more nourishing sweet treats coming soon! There’s nothing more satisfying than a raw vegan dessert and they’re also easier to make than baked goods in my opinion. So stay tuned as I experiment more in the kitchen making delicious desserts for y’all.

Ingredients

For the cookie dough

  • 1 cup oat flour
  • ¼ cup coconut flour
  • ¼ cup almond butter
  • 2 ½ cup dates pitted

For the chocolate

  • ½ cup coconut oil melted
  • cup cacao powder
  • ¼ cup maple syrup

Instructions

  • Process all the cookie dough ingredients in a food processor until well combined.
  • Remove the sticky dough from the processor and roll into balls.
  • Place in the freezer while you make the chocolate.
  • Whisk chocolate ingredients together in a medium sized bowl.
  • Remove cookie dough from freezer and dip the balls in the chocolate.
  • Stick them in the fridge until the chocolate hardens.
  • Enjoy!

Notes

I triple coated the cookie dough balls in the chocolate. This is optional, but you should have enough chocolate left over to at least double coat them. I highly recommend doing so.

Omg…THANK YOU for creating such a wonderful recipe. When I first seen the chocolate coating I got disheartened because I thought it had to be refined sugar! Haaha, sadly toooooo excited that it’s not! xxx
