This double-layered mango blueberry dragon fruit smoothie makes the best refreshing treat! During these hot summer months, I absolutely cannot go without a cold smoothie or banana ice cream in the morning. It cools me down after my daily morning run & workout and fills me up just enough to get me through until lunch time. I used to always eat a big batch of rawnola and banana ice cream for breakfast every morning.

Seriously, for a couple months straight I ate that same thing over and over. I’d switch up the nice cream flavors of course, but besides that I was pretty consistent. But now, I have to say I’ve hopped on the smoothie train.

I’ve been really inspired by lonijane, bysaber, and alison_wu on Instagram when it comes to upping my smoothie game. I’ve really got girl crushes on them. From their beautiful, layered smoothies to their colorful combinations to interesting fruit & superfood add-ins, I’ve learned that a good smoothie can be easy, delicious, and versatile! So, I’ve been experimenting all week and this mango blueberry dragon fruit smoothie has been my favorite flavor so far.

If you have all of 5 minutes on your hands, you can whip up this smoothie!

For the mango layer, I blended together frozen bananas, frozen mango, and filtered water. Then, just take out half of the mango smoothie and leave the rest in your blender. Add in frozen blueberries and frozen dragon fruit and blend again for the pink layer. For the finishing touch, all you have to do is layer them together in a jar!

I find that these days, a small smoothie just doesn’t cut it for me. So, I bought this awesome 1 litre Mason jar that fits my large smoothie appetite. As a vegan, I eat a whole boatload of raw fruits and veggies on a daily basis. If you’re transitioning to this lifestyle, it’s important that you get rid of the idea that “calories are bad”. When I started eating nutrient-dense, plant-based foods instead of refined foods and processed fats, I was a lot hungrier at first because I wasn’t properly nourishing my body. I was used to eating junk foods and limiting myself, literally calorie counting. But once I started eating good carbs, natural plant fats, and more fruits & veggies, then I got rid of these bad habits of restricting myself and ate in abundance.

I’ve honestly never felt better since transitioning to a plant-based lifestyle! Smoothies like this one are a staple for me because they’re quick, yummy, and the flavor options are endless. If you’ve never had dragon fruit before, you can find it at any Asian supermarket. I live in Hong Kong, so I have no problem finding it but when I lived in the U.S. it was a bit harder to find. I recommend using the dragon fruit with the pink/purple on the inside, not the white one, to get this lovely bright color!

Mango Blueberry Dragon Fruit Smoothie

An easy, colorful & delicious double-layer mango blueberry dragon fruit smoothie. Only 5 ingredients needed for a healthy, refreshing breakfast!

Ingredients

For the mango layer

  • 4-5 frozen bananas
  • 1/2 mango frozen
  • 1/2 cup water

For the blueberry dragon fruit layer

  • 1/4 cup frozen blueberries
  • 1/4 cup frozen dragon fruit

Instructions

  • In a high speed blender, blend frozen bananas, mango, and water until smooth and creamy.
  • Transfer 1/2 of the smoothie to a bowl or cup and set aside.
  • Add in frozen blueberries and dragon fruit and blend until smooth and creamy.
  • Layer mango smoothie & blueberry dragon fruit smoothie one after the other in a large glass jar.
  • Drink up!
