I love rawnola, but now that it’s winter it’s time for a spiced granola. I figured a warm, freshly baked granola would not only be super comforting, but also would be a great nutritious snack to take with me to the airport on my way to Amsterdam. My boyfriend and I leave tonight at midnight on the redeye and we’re both ecstatic to say the least! We’ll be there until December 28th and I can’t wait to explore all the vegan food the city has to offer. Until then, here’s this recipe for a deliciously crunchy, sweet cinnamon maple granola.
The best thing about oven-baked granola is it’s got such a nice crunch to it.
I made mine super crispy and sweet thanks to a generous dose of coconut sugar and maple syrup. Also, I noticed that the flavor develops more when you bake granola, as opposed to just blending up rawnola. But then you’re faced with having to wait for it to bake in the oven rather than having it right away. Either way, this granola is a winner in my books!

All you need is: gluten-free rolled oats, maple syrup, coconut sugar, and cinnamon. Yep, that’s it! I love cinnamon so much. It’s my all-time favorite spice and I put it in every single dessert I make. If you’re a cinnamon lover like me, then I’m positive you’ll be hooked on this granola!
There are so many granola brands at the grocery store which can be really overwhelming.
The bags of granola usually take up an entire half an aisle on their own! But you can go ahead and ditch the store bought kind that’s usually laden with processed sugars, additives, and other nasties. It’s really simple to make granola on your own that’s much healthier and it will save you a boatload of money too!

I baked mine in the oven for about 25 minutes and then let it cool in the pan for another 45 minutes before breaking it up. You’ve got to wait and let it cool before eating it because that’s how it hardens and gets crunchy.
This granola would be a great surprise treat to give as a gift for the holidays. You could pack it up in a mason jar and then tie a bow around it. I love homemade gifts, especially when they’re edible and delicious! If there’s one thing everyone likes, it’s food so you really can’t go wrong.
Cinnamon Maple Granola
Ingredients
- 3 cups rolled oats gluten-free
- 1/2 cup coconut sugar
- 1/2 cup maple syrup
- 2 tbsp cinnamon
Instructions
- Preheat oven to 200 degrees Celsius.
- Place oats in a large mixing bowl.
- Add coconut sugar and cinnamon and mix well.
- Pour in maple syrup and stir until evenly coated.
- Bake for 25 minutes or until slightly browned and crispy, flipping halfway through.
- Let cool for 30-45 minutes before eating.
