I’ve gone and done it! I’ve successfully made my first ever loaf of homemade bread like I’d promised myself I’d do for so long. Right off the bat, I put it to good use by making this classic childhood favorite: an almond butter & jelly sandwich. Fine, I’ll admit growing up it was usually PB&J at my house, but almond butter is healthier than peanut butter and it tastes even better because it’s homemade. Oh yeah, and this whole sandwich is vegan, gluten-free, and refined sugar-free!
I’d actually like to call this one a double decker almond butter & jam sandwich.
I could’ve just used two slices of bread, with almond butter & blueberry jelly slathered in between. But instead, I took it up a notch by making not one but TWO almond butter & jelly sandwiches and stacking them on top of one another. Major skill if you can do this without the jelly oozing out of the sides.
This is probably one of the easiest & most delicious meals out there.
I don’t care what anyone says. It doesn’t matter how old you are or where you’re from. Anyone and everyone can enjoy an almond butter (or replace with any nut butter you have) & jelly sandwich!
I wanted to make my own homemade, vegan & gluten-free sandwich bread.
However, you can use any type of bread you want. Since I’ve tried and failed at making bread a couple of times before, I played it safe and used a pre-made baking mix that I found at my local health foods store. It happened to be gluten-free and non-dairy, so I thought I’d give it a try. I was determined this time to make it work.
The recipe called for oil which I replaced with mashed ripe banana.
I used flax seed eggs to keep it vegan. To my surprise, it turned out fantastic and really tasty! The consistency was perfectly soft and fluffy like regular bread, which can be so hard to achieve when it comes to gluten-free bread. Anyways, after that undertaking, I took the easy route by slathering on some store-bought blueberry jelly (all-natural with no added sugar of course!).
I did manage to make the best homemade almond butter.
I whipped up a jar of fresh sea salt almond butter made from: dry roasted almonds, coconut sugar, and pink Himalayan sea salt. It was also really easy to make on my own! The almond butter turned out super creamy & totally addicting. Layer it all together and there you have it: the best ever almond butter & jelly sandwich!

Almond Butter & Jelly Sandwich
Ingredients
For the bread
- 1 package Pamela’s gluten-free bread mix
- 1/3 cup mashed banana
- 2 flax eggs 1 tbsp flax seed + 2 tbsp water each
For the almond butter
- 2 cups raw almonds
- 1/4 cup coconut sugar
- 1/4 tsp Himalayan sea salt
- your favorite jam
Instructions
For the bread
- Follow package instructions.
- Replace oil with mashed banana & use flax eggs instead of regular eggs.
- Bake according to package.
For the almond butter
- Preheat oven to 175 degrees Celsius.
- Place almonds on a baking sheet lined with parchment paper.
- Stick them in the oven to dry roast for 12 minutes.
- Remove from oven and allow to cool.
- Add almonds to a food processor and process for 12-15 minutes until you get a smooth, creamy almond butter.
- Add in coconut sugar and sea salt and process until well combined.
- Transfer to a mason jar.
Assembly
- Toast two pieces of bread.
- Spread almond butter on one piece and jelly on the other.
- Sandwich together.
- Repeat.
- Layer sandwiches on top of one another.
