I’d like to start off with an ode to this vegan burger. Yep, you bet I got a vegan burger in Paris and it was the best burger I’ve had in years. It’s actually the only burger I’ve had in the past 2 years (besides ones I’ve made myself at home), but darn it was good. It’s also basically the only vegan food I had in Paris that wasn’t sushi. Paris was well, Paris. I liked it, though I missed waking up to the sparkling, beautiful Mediterranean Ocean every day in the south of France. I’ll admit the French Riviera stole my heart.
So, I shared on my Instagram & recipe blog post yesterday that we received some bad news. We will not be making it to Nashville for the 4th of July and my boyfriend’s best friend’s wedding. But instead of staying down about it, we whipped up a batch of these raw peanut butter cookie dough balls and went back to the drawing board. The good news? Now we’ll be taking a trip to Paris + the south of France for 2 weeks! As we plan like crazy, I’ve had my mind on the recent summer solstice and strawberry moon. It’s the longest day of the year and the rose moon is a once-in-a-lifetime sighting that hasn’t happened since 1967. Which just makes me feel like everything is going to be okay.

One look at this vegan burger and I know I’m in heaven. Seriously the vegan food scene in New York City is unlike any I’ve seen. Forget the kale salads and cold-pressed juices, I’m talking vegan mac n’ cheese with sweet potato-cheese sauce and shitake bacon, giant old-fashioned cinnamon rolls, a guacamole burger topped with smashed avocado, corn salsa and chipotle aioli, and maple pecan waffles with candied pecans and Vermont maple syrup. So be prepared to drool all over your keyboard, because this list of the 4 best vegan eats in New York City is going to drive you wild.
