These easy vegan & gluten-free overnight oats have been my go-to breakfast lately. I love being able to just grab a jar out of the fridge after my morning run, saving me so much time usually spent debating what to make. I’ve been really busy lately, so I’m trying to come up with more ways of being productive when and where I can. As much as I love making french toast or banana oatmeal breakfast cookies, I don’t have time most weekdays to make such epic breakfasts. But that is no excuse for skipping out on breakfast! That’s why I’ve made these quick, delicious overnight oats that you can prepare ahead of time.
Peanut butter and chocolate go together like peanut butter and jelly! So, when I was brainstorming up some new overnight oats flavor combinations, I thought I’d try this trusty duo. I usually go for my old favorite cinnamon almond butter banana overnight oats, but in the spirit of trying new things as the new 23 year old me I switched it up. The result was these deliciously creamy, naturally sweet, vegan & gluten-free overnight oats that taste like a cookie!
The bad news is I’m still feeling quite sick. My sort throat is gone, but in its place I now have a horrible head cold and congestion meaning I’m sneezing non-stop. It’s not the most fun. It does, however, mean that I’m still sticking to eating mostly smoothie bowls, banana ice cream, oats, and potatoes. This isn’t too far of a cry from what I normally eat anyways. Today, I’ve blended up this acai bowl with easy 4-ingredient rawnola balls which is my new obsession that I can’t wait to share with you.
