Finally #popsicleweek has arrived! I’ve rounded up these 5 amazing vegan popsicle recipes for you to try. I’ve literally been melting this past week in Hong Kong, with such high humidity that I feel like I’m walking around a jungle on a daily basis. Basically, imagine living in a tropical climate minus the beach and palm trees. Got it? Anyways, I’ve been getting really excited for popsicle week, because the best way to cool off in the summer is by eating popsicles on the daily. Duh!
It’s sporadically hot & sunny one second and then raining the next second here in Hong Kong! I’ve still managed to bang out my 5 mile daily morning run, but my cravings have slowly but surely started to change. I blame it on the weather (only teasing!). I’ll get more into my appetite changes below, but for the time being I’m loving this easy, 4-ingredient raw vegan cinnamon peanut butter nice cream. It’s a great way to get a healthy, extra dose of protein in post-workout!
I go through phases where I really like juice, then I don’t drink it for a couple of weeks, and then I start to crave it again. I guess you could say it’s a very temperamental relationship. I thought after my last 3 day juice cleanse that I’d sworn off juice forever. Don’t get me wrong, the cleanse went really well and I felt great afterwards. But it was an incredibly tough mental challenge for me. I also just couldn’t stand juice after drinking just that for 3 days straight. But alas, after over indulging last week, I found my body craving nothing other than cold-pressed juice this weekend.
