Happy hump day everyone! I’m super excited to share the recipe for these delicious, chewy raw vegan salted caramel cookie sandwiches. They’re super sweet, but naturally sweetened, so they definitely make for an extra special healthy-ish plant-based treat. I nommed on them over the weekend to reward myself after a week of hard work! I’ve had some requests for this recipe on Instagram, so I wanted to quickly get it up so you can enjoy it too.
Salted caramel + energy balls = the perfect vegan dessert! I’m a big fan of bliss balls because they’re like an energy-packed dessert that’s healthy and delicious. I’ve always been a caramel lover as well, so when I was trying to think up a fun Valentine’s day treat I figured I’d make these. These raw salted caramel bliss balls would be great to make for a Galentine’s day party, to gift to your boyfriend or girlfriend, or just to treat yourself!
I was craving sweets *again and was too lazy to actually plan what I was making ahead of time and go to the grocery store. So, I ended up experimenting in the kitchen with the ingredients I had on hand: dates, almond butter, and oats for the most part. I wanted something that would be ready right away and would be delicious and chewy. The end result were these perfectly sweet, soft raw cookie dough bites with salted caramel frosting.
