For Thanksgiving this year, I actually got the chance to cook for myself and my fiance at home. I was super duper excited, because every other year we’ve either been away on vacation or gone out to dinner on Thanksgiving. I wanted to challenge myself and make five different vegan dishes, which I knew he’d love! So, keep reading to see what I decided to serve for a vegan-friendly Thanksgiving including this delicious vegan and gluten-free pumpkin pie.
The only thing better than nice cream are nice cream sandwiches! I threw on my festive hat and got into the Thanksgiving mood in the kitchen last week. The first thing that popped to mind was pumpkin pie banana ice cream. I’d already made a batch of my favorite raw vegan vanilla oat cookies, so naturally I sandwiched them together with the pumpkin pie nice cream. It’s the perfect healthy, delicious treat for fall (if you’re like me and eat ice cream year round)!
In the spirit of cooking seasonally, I’ve been thinking all about pumpkin and what I can do with it. I’ve been bombarded with vegan pumpkin pie, pumpkin cookies, pumpkin muffins and pumpkin lattes. I’m more than happy to join in this pumpkin party. Since I enjoyed my banana bread baked oatmeal so much last week, I decided I’d switch the bananas for pumpkin to make this delicious pumpkin pie baked oatmeal. I’m spreading some more pumpkin love in time for Thanksgiving!
