I wanted to recreate a childhood favorite of mine: mac & cheese. I made it vegan-friendly by coming up with the creamiest vegan cheese sauce (can you guess what it’s made from?). This delicious, creamy mac & cheese is the ULTIMATE comfort food. Oh yeah, and it’s also gluten-free thanks to the endless options for gluten-free pasta these days. I went with quinoa & corn shells, but you could use brown rice pasta or regular pasta if you’re not gluten-free.
