Happy hump day everyone! I’m super excited to share the recipe for these delicious, chewy raw vegan salted caramel cookie sandwiches. They’re super sweet, but naturally sweetened, so they definitely make for an extra special healthy-ish plant-based treat. I nommed on them over the weekend to reward myself after a week of hard work! I’ve had some requests for this recipe on Instagram, so I wanted to quickly get it up so you can enjoy it too.
Vegan, gluten-free & refined sugar-free oatmeal raisin cookies are on the menu this week! These were my dad’s favorite, so I had to tinker with a couple of recipes to bring them up to his standard. They’re a bit crispy on the outside, but soft and chewy on the inside. Perfect to enjoy alongside a cup of tea or as a naturally sweet snack!

I’ve always liked them, but haven’t gotten around to making them until now for reasons that are beyond me. And guess what? You only need 6 super simple ingredients to make these.
