Halloween is creeping up on us! Day by day, I’ve been checking off my list of everything I want to do leading up to Halloween. I watched Hocus Pocus, went to see the Halloween villains parade at Disneyland with my fiance, and bought a ridiculous amount of pumpkin everything (mini pumpkins, pumpkin napkins, pumpkin trick-or-treat buckets, pumpkin lantern).

Happy hump day everyone! I’m super excited to share the recipe for these delicious, chewy raw vegan salted caramel cookie sandwiches. They’re super sweet, but naturally sweetened, so they definitely make for an extra special healthy-ish plant-based treat. I nommed on them over the weekend to reward myself after a week of hard work! I’ve had some requests for this recipe on Instagram, so I wanted to quickly get it up so you can enjoy it too.
This weekend is actually a big holiday here in Hong Kong, known as the Mid-Autumn or Full Moon Festival. My boyfriend got off work on Friday, so we turned it into a fun 3-day weekend staycation full of sushi dinners, horror movies, and long walks outside. I decided I’d pass on the traditional dessert of mooncakes in favor of these raw vegan caramel tarts. They’re full of a creamy, dreamy date caramel on top of a delicious raw cookie dough base.
