Halloween is creeping up on us! Day by day, I’ve been checking off my list of everything I want to do leading up to Halloween. I watched Hocus Pocus, went to see the Halloween villains parade at Disneyland with my fiance, and bought a ridiculous amount of pumpkin everything (mini pumpkins, pumpkin napkins, pumpkin trick-or-treat buckets, pumpkin lantern).

wish list wednesday // candy I know it’s summer, a time when everyone seems to be trying their best to stay healthy and step up their workout game. But my philosophy revolves around the idea of listening to your body and eating what it craves. You can eat healthy AND exercise regularly AND enjoy the foods you love. Why does it have to be one or the other? Especially when it comes to me and my incessant sweet tooth, sometimes this means treating myself to a candy bar or two. I really don’t see the point in limiting yourself, because trust me I’ve been down that road and it never ends well. Instead, I like to make my own healthier raw, vegan, gluten-free, and refined sugar-free versions of candy, like my raw snickers bars. That way I can always have a little when the craving hits and I’m happy knowing it’s made from real, whole ingredients that leave me feeling fully satisfied.

Festive Friday // Raw Snickers Bars (R, V, GF, RSF)

I was craving a candy bar and Snickers is an all-time favorite of mine. The best part is this one has all-natural wholesome ingredients so your cravings will be satisfied for longer!

healthy snickers bars // raw, vegan, gluten-free, refined sugar-free On the bottom, there’s a coconutty cashew base layered with a soft peanut butter date caramel. Then on top, I sprinkled on some raw peanuts and drizzled the bars with raw chocolate. Viola, the raw Snickers was born!

healthy snickers bars // raw, vegan, gluten-free, refined sugar-free Instead of adding any fillers or processed sugars like in a normal Snickers bar, I made these healthier by using raw, sugar-free ingredients. The result is just as indulgent, rich, and fulfilling as the original!

For student government, we’d literally carry around bags of candy bars all day long and sell them to our fellow students and teachers. The temptation was real. I’d dig my hand into my stash daily. So long story short, I wanted to rekindle my love for Snickers all over again.

Healthy raw vegan snickers bars to satisfy your candy cravings! Made all-natural with no added sugar.
Recipe type: Dessert
Cuisine: Raw, Vegan, Gluten-free, Refined Sugar-free
For the base
  • 1 1/2 cups cashews
  • 1/2 cup shredded coconut
  • 8 Medjool dates, pitted
  • 3 tbsp brown rice syrup
For the peanut butter caramel
  • 8 Medjool dates, pitted
  • 1/4 cup peanut butter
  • 2 tbsp almond milk
  • 1 tbsp brown rice syrup
For assembly
  • 1/4 cup peanuts
  • 1/2 of a bar of raw chocolate
For the base:
  1. In a food processor, process cashews into small pieces.
  2. Add in coconut, dates, and brown rice syrup and process until a sticky dough forms.
  3. Press into a loaf pan lined with parchment paper and put in the freezer.
For the caramel
  1. Process all ingredients, adding almond milk a little bit at a time until a smooth caramel forms.
  2. Spread caramel over the base.
For assembly
  1. Scatter peanuts on top of the caramel and press down lightly.
  2. Melt your chocolate in the microwave, stirring every 15 seconds until completely melted.
  3. Drizzle chocolate over the top of the bars.
  4. Place back in the freezer until hardened.
  5. Remove from the freezer, cut into bars, and eat some healthy candy!
