Overnight oats are one of the simplest, healthiest breakfast solutions out there! The little kid in me still loves PB&J, so I figured I’d try switching my usual almond butter banana overnight oats for these PB&J overnight oats. They’re completely vegan, gluten-free, and refined sugar-free with only 8 basic ingredients. I normally make mine ahead of time and let them soak for 24 hours to really let the oats absorb all the delicious flavors before digging in!
It actually happened! I made the most delicious, homemade mini blueberry pop tarts that’re completely vegan, gluten-free, and refined sugar-free.They’re easy to make with only 7 ingredients. Plus, I mean aren’t they just the cutest thing ever? I couldn’t stop gushing at them after taking them out of the oven. So much so that I ALMOST didn’t want to eat them! But one yummy bite later and I wanted to devour them all.
I’ve become obsessed with chia seed jam lately. I made a big batch of blueberry chia jam earlier and had it just sitting in my fridge. I used it occasionally to make PB&J sandwiches during the week, but had some leftovers. As I always do on Sundays, I wanted to clean out my fridge. So I thought I’d make oat squares layered with the blueberry chia seed jam. They’re like a blueberry crumble in bar form, with naturally sweetened oats as the base layered with jam and topped with an oat crumble.
