State of Mind Sunday // What to Eat When You’re Sick

what to eat when you're sick #vegan Welcome to another edition of state of mind sunday! This week, I’ll be talking about what to eat if you’re sick as a vegan. I normally really take care of myself and my body, so I rarely get sick. But after a 2 week vacation in France then returning to Hong Kong to find it extremely hot & humid mixed with heavy jet lag, I came down with a really bad sore throat. Like I woke up on Sunday with sharp pains in my throat and I could barely swallow. Oh no! So I hoped for the best, drinking lots of fluids in the hopes that it would naturally heal. Did it work?

Indeed it did not! I still had a horrible sore throat the next day, which made me really grumpy because I couldn’t eat anything without feeling pain. I managed to drag myself out of bed by 11am, which is so not like me because I’m normally an early riser. I lugged myself over to the doctor, who told me I had an inflamed throat with sore spots on the right side. This, in turn, gave me headaches and ear aches as well as cold night sweats which meant I hadn’t been getting good sleep. Which, after being jet lagged, was exactly what I needed in order to get better.

So, he prescribed me some antibiotics and sent me on my way with instructions to eat only cold, soft foods! For me, this meant plenty of banana ice cream, smoothies, and overnight oats. I even snuck in some baked potatoes and mac & cheese last night, which ended up going over pretty well. I let it cool down to room temperature and they were soft, so they felt fine and tasted amazing. But for the most part, I’ve been sticking to a regular diet of fruit-based smoothies and cold nice cream!
