Mother’s Day is right around the corner! You know what that means. It’s time to thank your mom for creating you and show her some love. And in my book, one of the best ways to show my mom how much I love her is by making her some beautifully healthy, delicious food. Here are my top vegan brunch picks that I pulled from some of my favorite bloggers.
First, you have vegan & gluten-free hemp za’atar sorghum crackers with parsley hummus. The crackers are crunchy and flavorful with a yummy lemony, creamy hummus on the side. What’s not to like? I think this would make a perfect appetizer or small dish to start off with.
Then, for the main course I’m thinking of making these vegan & gluten-free falafel burger sliders with cashew tzatziki. I may be a little ambitious with this one, but I couldn’t think of a better time to master my cooking skills. Plus, the photos of these just make me want to eat them right from the screen. Since it’s Spring, I’m dreaming of having an outdoor picnic with these falafel burgers as the highlight of the brunch.
When I think burgers, I instantly think of fries. These loaded spring fries with green goddess tahini sauce would compliment the burgers perfectly. Then last but not least, you have my favorite course: dessert. This healthy strawberries and cream cake is made from all-natural, unprocessed ingredients with no added sugars. I think it would be the perfect final hooray for a lovely Mother’s Day brunch!
