Yes, of all things granola bars have really been on my mind lately. I used to eat them every day in college, albeit not the healthiest granola bars (think chocolate peanut butter covered protein bars). The ones I’d usually get were loaded with artificial sugar and were super high in fat and protein which wasn’t good because at that time I wasn’t even exercising very much. So, in honor of snacking the right way, I’ve rounded up 4 recipes for healthy & indulgent vegan granola bars.

 To start, let’s take a minute to appreciate why granola bars are so amazing in the first place. They’re small in size so you can have one without feeling guilty at all. Plus, they’re easy to carry around with you to work, the gym, or hiking. They’re relatively easy to make, considering you just mix up a bunch of ingredients, stick them in a pan, and then bake them or freeze them. I literally grew up on granola bars as a kid, so my appreciation for them runs deep.

1 / Tahini, sesame & fig granola bars

First off, we’ve got these amazingly crispy & chewy tahini, sesame & fig puffed millet granola bars. In case you didn’t know, puffed millet is actually a gluten-free grain mildly sweet and nutty. It makes a great gluten-free and nut-free substitute as the base for these bars. You don’t even need an oven to make these, so it’s an extra simple recipe!

2 / Quinoa & chia freezer bars

Next comes these quinoa & chia freezer bars that will literally melt in your mouth. The combo of almond & vanilla is one of my favorites, plus the chia seeds will give you a good dose of natural fiber & protein. You can whip up a batch of these in just 5 minutes.

3 / Peanut butter granola bars

These peanut butter granola bars are definitely the most decadent of the bunch. They’ve got hemp seeds, chia seeds & pumpkin seeds mixed with hearty oats as the base. Then, you fill them up with cacao nibs & peanut butter and garnish with a drizzle of chocolate. They’re for anyone who’s looking for a really satisfying pre- or post-workout snack (or anyone with a chocolate craving).

4 / Apple & raisin granola bars

Last but not least, we have these delicious, simple apple & raisin granola bars. I love that you can make these with less than 8 ingredients. These bars are packed with a mixture of oats, raisins, dried apple, coconut oil, and brown rice syrup. I think they’re the most kid-friendly of the bunch and would be great to have handy as an afternoon snack.
