We’ve had a crazy past 2 months! Seriously, I don’t know where the time has gone. We were in London for the last week of March. Then, my boyfriend surprised me with a spontaneous weekend getaway in Phuket, Thailand to celebrate his birthday in April. So I barely felt like I’ve had my feet on the ground. 

Speaking of birthdays, I have officially outdone myself this year.

First, I took him a goodie bag filled with all his favorite snacks and junk food to work with a balloon on Friday. We went to his parents’ place that night where they cooked him an epic feast of all his favorites.

Then, on Saturday, I planned a surprise birthday brunch party with 12 of his closest friends at his favorite Italian restaurant here in Hong Kong. I wish you guys could’ve seen his face. He hates surprises. It was absolutely priceless. *Don’t worry he ended up loving it! We partied the day away on his actual birthday. Then, Sunday night I took him out to a nice dinner at this really cool, hippie pizza restaurant by the beach. They have the best thin-crust pizza ever and happily made me a delicious vegan pizza!

Then, I let him open all his birthday gifts and we spent the rest of the night at home. It was truly wonderful. Oh yeah, and I can’t forget the triple layer vegan funfetti cake with hombre icing that I baked him! It literally took me 4 hours to make. It was the first time I made a cake of that scale, not to mention a vegan one. But everyone loved it!

Anyways, as for this month, I’ve been spring cleaning our apartment. I’m working on getting rid of everything we don’t need or use. I’ve started at the front of the apartment and am working on one room at a time. I’ve already done the bathroom, which was an absolute nightmare but so worth it! I can’t even begin to explain how good it feels to have it so clean and organized.

I feel so much more centred in a minimalist environment. When it comes to my eclectic tastes, I love collecting books, magnets, and mugs to name a few. But when it comes to other things like clothes, shoes, and household items, I really feel like the less the better.     Great collection of recipes Laura! And I love your photoshop/illustrator skills! So good. Sounds you had a huge bday celebration for your man, lucky guy. Surprises & Cake & cupcakes!! That’s impressive- my man would go nuts. Lol
