Just the other day, someone asked me what my favorite foods were and sweet potatoes definitely topped my list. Holy moly, they’re just so delicious and can be used in so many dishes or just eaten on their own. I am a big fan of breakfast, so I whipped up these super simple sweet potato skillet hash browns on the stove and then added tahini. Sweet potatoes + tahini = best combination ever!
When I say the recipe is simple, I mean seriously anyone could make these. You don’t have to be a master chef to pull this one off. All you need is a big sweet potato, some tahini, and salt & pepper to taste. Growing up in the South, I ate hash browns a lot for breakfast (Waffle House and iHop anyone?) but they were always really greasy and oily. I wanted to make a healthier version of one of my go-to breakfast staples so here is a vegan and gluten-free recipe for you all to enjoy!
I sprayed a little bit of coconut oil cooking spray on the pan while it heated, then added my shredded sweet potato, flipped the hash browns over halfway through, and loaded them onto a plate when they were done. After drizzling them with tahini and sprinkling them with salt & pepper, I dug right in.
I seriously cannot get over how perfect tahini and sweet potatoes are together. The taste is the absolute best in my opinion. It’s like they were just meant to be eaten together. If you’ve never tried tahini, it’s made from ground up sesame seeds. I always buy mine organic and check to make sure that it only has one ingredient in it: sesame seeds.
I’m the type of person who prefers meals that are easy to make and preferably require only a couple of ingredients. This amazing breakfast fits that standard plus it was ready in just minutes.

- 1 large sweet potato
- 1 tbsp tahini
- Himalayan sea salt
- cracked pepper
- Heat a large skillet over medium heat and spray with coconut oil cooking spray.
- Grate the sweet potato on the large holes of a grater.
- When skillet is hot, add grated sweet potato.
- Allow to cook for 7 minutes, then flip them over.
- Let cook for another 7 minutes.
- Remove from heat and transfer to a plate.
- Drizzle with tahini and sprinkle salt & pepper on top to taste.
- Dig in!
