And best part is they’re completely vegan, gluten-free, oil-free, low-fat, and no-bake. Meaning they make the perfect, easy allergy-friendly treat when you’re craving sweets in a hurry.

Dates are so naturally sweet and nutritious, plus they’re known to promote digestive health. Not like I need another excuse to eat them. Dates are already part of my daily diet, so I was super excited to create this new delicious recipe with them!

After taste testing them on my boyfriend, I’m proud to say they’ll please the non-vegan crowd as well.

They’re totally delectable, chewy, and soft with a crumble on top for that extra “umph”. I will admit they require a solid amount of dates, but I believe you can never have too many dates. I stock up on them in bulk and buy them wholesale here in Hong Kong, so that it makes sense for me in terms of cost.

They’re good for you and your tummy, leaving you feeling satisfied and curbing your sweet cravings! I made sure to use only unrefined sweeteners, relying on dates and brown rice syrup. Feel free to sub any other liquid sweetener for the brown rice syrup.

Chewy, delicious 4-ingredient date squares that're naturally sweetened! An oat cookie base layered with date caramel and topped with date oat crumble. Vegan & gluten-free.

Ingredients
For the oat cookie base
  • 1 1/2 cups oats
  • 1/2 cup dates, pitted
  • 1/4 cup brown rice syrup
For the date caramel
  • 1 3/4 cups dates
  • 2 tbsp hot water
  • 1 tbsp brown rice syrup
  • 1 tsp cinnamon
For the crumble
  • 1/2 cup oats
  • 4 dates, pitted
  • 1 tbsp brown rice syrup
  • 1/2 tsp cinnamon
Instructions
For the oat cookie base
  1. Line a loaf pan with parchment paper.
  2. In a food processor, pulse the oats until they're broken down into a flour-like consistency.
  3. Add in the dates and brown rice syrup and process until a sticky ball of dough forms.
  4. Transfer dough to the loaf pan and press down evenly with your hands.
  5. Place in the freezer while you make the date caramel layer.
For the date caramel
  1. Add dates and hot water to a high-speed blender or food processor.
  2. Process until smooth (it should still be sticky and relatively thick).
  3. Add in brown rice syrup and cinnamon and continue to process until well mixed.
  4. Stop and scrape down the sides as needed. It should be like a paste.
  5. Scoop out the date caramel and spread it evenly on top of the base with wet hands.
  6. Place back in the freezer.
For the crumble
  1. Add the oats and dates to a high-speed blender or food processor.
  2. Pulse until just combined.
  3. Add in brown rice syrup and cinnamon and pulse until you get a crumbly mixture. Be careful not to process too much.
  4. Sprinkle crumble mixture evenly on top of the date caramel.
  5. Press crumble down gently with your hands.
  6. Place back in the freezer for 1 hour to set.
  7. Cut into bars and serve chilled!
Notes
*Store leftovers in the freezer!
