  Raw Vegan Matcha Caramel Truffles Happy St. Patrick’s Day! Here’s a green treat for you that’s raw, vegan, gluten-free, refined sugar-free, and made with only 3 ingredients: matcha caramel truffles. I always try to work healthy greens into my daily routine, so today is no exception. These treats are completely all-natural and taste delicious right out of the freezer.  

Raw Vegan Matcha Caramel Truffles All you need: soft Medjool dates, almond butter, and matcha green tea powder. I know, it’s hard to believe that truffles could really be this easy. But you’ll be amazed by how soft and caramel-y these taste.

Raw Vegan Matcha Caramel Truffles Growing up, I was a big fan of Rolos. It was one of my favorite candies. There was just something about that caramel center that hooked me. I was on a mission to make a much healthier version then got inspired by all the green going around for Saint Patrick’s Day.

Raw Vegan Matcha Caramel Truffles Why matcha powder? Matcha powder is actually straight, stoneground green tea leaves. When making green tea, a majority of the health benefits get trapped in the leaves never actually making it into the tea. But when you eat or drink matcha, you’re able to get the full amount of vitamins, minerals, antioxidants, and amino acids. 

The dates + almond butter create a gooey caramel that you can easily roll into balls after you stick it in the freezer for 10 minutes. I went with green tea match powder because it is rich in fiber, great for detoxing, and can help enhance your mood and concentration. I might try rolling them in other yummy superfood powders, but for a Saint Patrick’s Day dessert these are spot on!

Raw Vegan Matcha Caramel Truffles I wanted them to be nice and chilled because I think it just makes them taste even better. Then I ate them straight out of the freezer like candy! A much healthier candy of course.

3-ingredient caramel truffles rolled in matcha powder. A deliciously healthy treat ready in 10 minutes!

Ingredients
  • 1 cup dates, pitted
  • 1 tbsp almond butter
  • matcha powder
Instructions
  1. Process the dates in a food processor until a sticky paste forms.
  2. Add the almond butter and process until combined. The mixture will be really sticky, which is good!
  3. Scoop the caramel into a bowl and freeze, uncovered, for 10 minutes.
  4. Shape the caramel into small balls and roll them in the matcha powder.
  5. Place in the freezer to chill.
  6. Enjoy!
