Raw Cookies with Salted Caramel Frosting

I was craving sweets *again and was too lazy to actually plan what I was making ahead of time and go to the grocery store. So, I ended up experimenting in the kitchen with the ingredients I had on hand: dates, almond butter, and oats for the most part. I wanted something that would be ready right away and would be delicious and chewy. The end result were these perfectly sweet, soft raw cookie dough bites with salted caramel frosting.

The good news is you only need five total ingredients to make these.

You probably already have the ingredients handy, so let’s just go ahead and call these a ‘lazy woman’s dessert’. Just teasing, but really this recipe is so simple and mess -free you’ll be happy you have it on those days when you’re sweet tooth hits without warning.

I love dates and eat them regularly.

I love them so much that I started buying them in bulk. Nature’s candy as they’re called, dates have a nice natural caramel taste to them and usually are super soft & sticky making them a great base for raw vegan desserts. They may be high in natural sugars, but that’s something I’m totally okay with because it’s all-natural. Ever since I started eating dates, I noticed that I stopped wanting to binge eat sweets.

As a kid, I used to eat cookie dough straight out of the package.

Needless to say, I never stopped and my love for cookie dough endured. Now that I’m more health conscious, I wanted to make a kid-friendly, safe raw cookies without eggs, dairy, or refined sugar that could be eaten straight up raw. No need to worry with these vegan no-bake cookies!

These raw cookies are really soft and chewy with a gooey salted caramel frosting on top.

To make the perfect vegan salted caramel, the key is to use really soft dates. So, if your dates are not soft and sticky, then definitely soak them in some hot water for a couple of hours. This will help make sure your caramel comes out nice and smooth.

Raw Cookies with Salted Caramel Frosting

Easy, chewy raw cookies with salted caramel frosting made with only 5 ingredients in under 15 minutes! A healthy dessert that's vegan & gluten-free.

Ingredients

For the raw cookies

  • 3/4 cup pitted dates
  • 1 cup rolled oats
  • 1 tbsp almond butter

For the salted caramel frosting

  • 3/4 cup pitted dates
  • 2 tbsp almond butter
  • 1/2 tsp Himalayan sea salt
  • water as needed

Instructions

For the raw cookies

  • Add all ingredients to a food processor or high speed blender.
  • Process on high until a sticky ball of dough forms.
  • Scoop dough out by the tablespoon and roll into balls between your hands.
  • Place on a cookie sheet lined with parchment paper.
  • Flatten down into a cookie shape with your hands.
  • Place in the freezer while you make the frosting.

For the salted caramel frosting

  • Add all ingredients to a food processor or high speed blender.
  • Process on high until you get a smooth caramel. Add water a little bit at a time if needed to get smooth consistency.
  • Spread on top of the cookie dough bites.
  • Freeze for 1-2 hours before serving.

Notes

Best eaten right out of the freezer.

    Thank God for dates (aka natures candy)! I love recipes like this where I can satisfy my sweet tooth without feeling guilty!
