Carrot Cake Bliss Balls

These carrot cake bliss balls are everything you could possibly want in a snack. They’re raw, vegan, gluten-free, refined sugar-free, and sneakily packed with veggies. I’ve never had healthy carrot cake in bite-sized form and now that I have I’m hooked! All it takes is 7 basic ingredients and less than 5 minutes to make these wonderful treats. 

I always keep all-natural plant-based treats like these stocked in my fridge for when my sweet tooth strikes. Sweetened with none other than my favorite, dates make them extra chewy and the perfect soft texture. I used Barhi dates that I picked up at the farmer’s market for an extra caramel-like flavor, but you can use whatever kind you have! 

I like to eat these carrot cake bliss balls straight out of the fridge because I think they’re best when they’re cold. But seriously, this is a major struggle for me. I barely have the patience to wait for them to firm up in the fridge. You’ll often find me just scraping the batter straight out of my food processor and devouring it! 

Bliss balls, energy balls, truffles- really these could be whatever you want to call them.

The most important part is they taste like carrot cake and are beyond delicious. When I first started making raw vegan desserts, I was amazed by all the possibilities of what you could make with so few ingredients. 

How do you make it vegan & raw? Well, all it takes is shredded carrots, rolled oats, and dates as the base. Then I toss in some raisins and shredded coconut plus nutmeg and cinnamon for the spices. Then, I rolled them in more shredded coconut for good measure.

Carrot Cake Bliss Balls

Bite-sized carrot cake bliss balls rolled in coconut. A delicious plant-based snack perfect to grab-and-go.

Ingredients

  • 1 cup pitted dates
  • 1 cup rolled oats
  • 1 cup grated carrot
  • 1/4 cup shredded coconut plus extra for rolling
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 1/8 tsp ginger

Instructions

  • Process all ingredients in a food processor until a stick ball of dough forms.
  • Remove dough from food processor and roll into bite-sized balls with your hands.
  • Roll balls in shredded coconut.
  • Place in the fridge for 30 mins to 1 hour.
  • Enjoy!

    Yum! We recently tweaked our take on raw carrot cake – but hadn’t thought about adding ginger! Doh! 😉

      Just had some raw carrot cake for my birthday! It’s my favorite. I think the ginger + cinnamon adds a really nice flavor 🙂

    Hi, I’m a little confused on the ingredients.
    What is raising and what is giner? I was think that these might be typos?

      Hi Grace! Wow, thanks for the catch 🙂 I just updated the recipe, but yes the ingredients should be raisins and ginger respectively, as I’m sure you would’ve guessed! I hope you enjoy these yummy bliss balls 🙂
