They’re raw, vegan, gluten-free, refined sugar-free, and sneakily packed with veggies. I’ve never had healthy carrot cake in bite-sized form and now that I have I’m hooked! All it takes is 7 basic ingredients and less than 5 minutes to make these wonderful treats.

I sweeten them with none other than my favorite: dates which makes them extra chewy and the perfect texture. I used Barhi dates that I picked up at the farmer’s market for an extra caramely flavor but you can use whatever kind you have!

But seriously, this is a major struggle for me. I barely have the patience to wait for them to firm up in the fridge. You’ll often find me just scraping the batter straight out of my food processor and devouring it!

The most important part is they taste like carrot cake and are beyond delicious. When I first started making raw vegan desserts, I was amazed by all the possibilities of what you could make with so few ingredients.

Then I toss in some raisins and shredded coconut plus nutmeg and cinnamon for the spices. Then, I rolled them in more shredded coconut for good measure.

Bite-sized raw vegan carrot cake bliss balls rolled in coconut!

Ingredients
  • 1 cup dates, pitted
  • 1 cup rolled oats
  • 1 cup carrot, grated
  • 1/4 cup shredded coconut, plus extra for rolling
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 1/8 tsp ginger
Instructions
  1. Process all ingredients in a food processor until a stick ball of dough forms.
  2. Remove dough from food processor and roll into bite-sized balls with your hands.
  3. Roll balls in shredded coconut.
  4. Place in the fridge for 30 mins to 1 hour.
  5. Enjoy!
