Tasty Tuesday // Raw Blueberry Dragon Fruit Nice Cream Cookie Sandwiches

There was also a batch of banana date oat, a.k.a. banana caramel, cookies. The nice cream wanted a friend, so it sandwiched itself between the cookies. They both lived happily ever after. That’s basically the story of how I came up with these purple berry nice cream cookie sandwiches. I had leftover banana date oat cookies and was craving nice cream. So I put two and two together and these raw vegan babies were born!

But I will never, ever stop eating nice cream no matter what the temperature is! It’s on my list of top 3 favorite meals to make and I eat it any time of day: for breakfast, lunch, dinner, snack, or dessert. You name it, there’s always a time and place for nice cream in my opinion. It becomes even better when you turn nice cream into nice cream sandwiches!

It’s true, they really just ended up being the best consistency and yummy taste if you’re a lover of chewy cookies and caramel! My tip is to enjoy them right out of the freezer because that’s when they’re the best.

The dragon fruit and blueberry combo has been my favorite lately because it’s super refreshing. It tastes kind of like an ice cream version of cotton candy. What could be better than that?

Normally, they’re loaded with tons of processed sugars, fillers, artificial coloring, and preservatives. So, I decided to take matters into my own hands and make an all-natural, vegan version that’s just as good if not better.Β

RAW BLUEBERRY DRAGON FRUIT NICE CREAM COOKIE SANDWICHES

Simple, no-church blueberry dragon fruit nice cream sandwiched between sticky banana date oat cookies! Easy, healthy, and all-natural. The perfect raw, vegan dessert or snack.

Ingredients
For the blueberry dragon fruit nice cream
  • 6-7 bananas, frozen
  • 1/2 cup dragon fruit, frozen
  • 1/2 cup blueberries, frozen
  • 2 tbsp coconut water, as needed
For the banana date oat cookies
  • See previous recipe post
Instructions
For the nice cream
  1. Place all the frozen fruit in a high speed blender or food processor.
  2. Blend on high until smooth and creamy.
  3. Add coconut water as needed until you reach desired consistency.
Assembly
  1. Take cookies out of the freezer.
  2. Scoop nice cream onto one cookie.
  3. Sandwich by placing another cookie on top.
  4. Enjoy!
