Once upon a time, there was blueberry dragon fruit nice cream. There was also a batch of banana date oat, a.k.a. banana caramel, cookies. The nice cream wanted a friend, so it sandwiched itself between the cookies. They both lived happily ever after. That’s basically the story of how I came up with these purple berry nice cream cookie sandwiches. I had leftover banana date oat cookies and was craving nice cream. So I put two and two together and these raw vegan babies were born!
Sure, it may be fall and the weather might be cooling down wherever you are. But I will never, ever stop eating nice cream no matter what the temperature is! It’s on my list of top 3 favorite meals to make and I eat it any time of day: for breakfast, lunch, dinner, snack, or dessert. You name it, there’s always a time and place for nice cream in my opinion. It becomes even better when you turn nice cream into nice cream sandwiches!
I mentioned in my last post about these cookies that they’re so deliciously chewy and taste like caramel thanks to the gooey Medjool dates and coconut nectar. It’s true, they really just ended up being the best consistency and yummy taste if you’re a lover of chewy cookies and caramel! My tip is to enjoy them right out of the freezer because that’s when they’re the best.
The nice cream is made from just three simple, frozen fruits: banana, dragon fruit, and blueberries. The dragon fruit and blueberry combo has been my favorite lately because it’s super refreshing. It tastes kind of like an ice cream version of cotton candy. What could be better than that?
Ice cream sandwiches used to be one of my favorite treats growing up. Normally, they’re loaded with tons of processed sugars, fillers, artificial coloring, and preservatives. So, I decided to take matters into my own hands and make an all-natural, vegan version that’s just as good if not better.

- 6-7 bananas, frozen
- 1/2 cup dragon fruit, frozen
- 1/2 cup blueberries, frozen
- 2 tbsp coconut water, as needed

- Place all the frozen fruit in a high speed blender or food processor.
- Blend on high until smooth and creamy.
- Add coconut water as needed until you reach desired consistency.
- Take cookies out of the freezer.
- Scoop nice cream onto one cookie.
- Sandwich by placing another cookie on top.
