Tasty Tuesday // Raw Almond Butter Cookies (R, V, GF, RSF)

These raw almond butter cookies have won my heart! Seriously, anything with almond butter is bound to be amazing. But when it’s in cookie form, it’s absolutely drool-worthy. This easy raw, vegan cookie recipe only requires 4 ingredients and takes under 10 minutes to make! It doesn’t get much easier than that. 

almond butter cookies // raw, vegan, gluten-free, sugar-free All you need is: almond meal, almond butter, dates, and vanilla extract. I didn’t even have to go buy anything for this recipe because I already had all the ingredients in my pantry. So yeah, no trip to the grocery store for me. Woohoo!

If you don’t have any almond meal, you can actually make your own by processing raw almonds in a food processor until they become a flour-like consistency. This is such a neat kitchen hack that I do all the time with raw nuts.

raw-almond-butter-cookies-graphic If you’ve noticed, I’ve been really into raw desserts lately. I’d say it’s bordering on obsession. They’re just so simple to make with basic, wholesome ingredients and they leave me (and my hyperactive sweet tooth) feeling so satisfied. I made some raw snickers bars and almond butter caramel bites last week which were super duper tasty. Then it hit me. I hadn’t made raw cookies yet so here we are.

All you need is dates to naturally sweeten them. They add such a nice, soft caramel-y taste to the cookies too. 

raw-almond-butter-cookies-24 What I love most about these cookies is their soft, chewy texture. They literally melt in your mouth just like a good cookie should. The vanilla + caramel flavors mixed with the almond butter really takes them to the next level.

I’m proud to say these are all-natural, gluten-free, raw, vegan, dairy-free, refined sugar-free, and high in protein so a little goes a long way. Unless you’re like me and you really just want to scarf down the whole batch within a day or two. But hey, who’s counting?

The easiest ever 4-ingredient raw, vegan almond butter cookies! Chewy, delicious, melt-in-your-mouth cookies that are healthy too.

  • 1 cup almond meal
  • 1 cup almond butter
  • 1 1/2 cups Medjool dates, pitted
  • 1 tsp vanilla
  1. Place all ingredients in a food processor.
  2. Process until a sticky dough forms.
  3. Roll into medium-sized balls with your hands.
  4. On a cookie sheet lined with parchment paper, press the balls down flat into a cookie shape.
  5. Place in the freezer for at least 30 minutes.
  6. Nom!
