Tasty Tuesday // Raw Almond Butter Caramel Bites (R, V, GF)

4-ingredient raw almond butter caramel bites // raw, vegan, gluten-free, refined sugar-free I thought to myself: what would be my favorite dessert? What instantly came to mind was that it had to be something with both almond butter and caramel. So I came up with these raw almond butter caramel bites. The amazingly gooey, soft date caramel on top of an chewy oat cookie is irresistible. I couldn’t keep my hands off of them!

I made the 2-ingredient cookie base from just oats and Medjool dates. Then you have the almond butter date caramel which came together using only dates, almond butter, and almond milk.

4-ingredient raw almond butter caramel bites // raw, vegan, gluten-free, refined sugar-free I used the softest Medjool dates I could find to get that gooey caramel texture. If yours aren’t soft, you can always soak them in warm water for 10-15 minutes to soften them up.

It ended up making the perfect bite-sized treats which would be great for to take to a potluck, get together, family gathering, or really any party. I guarantee everyone will gobble them up!

RAW ALMOND BUTTER CARAMEL BITES

A simple 3-ingredient almond butter date caramel on top of a chewy oat cookie. The perfect bite-sized raw vegan treat!

Ingredients
For the cookie
  • 1 1/2 cups Medjool dates, pitted
  • 1 1/2 cups oats
For the caramel
  • 1 1/2 cups Medjool dates, pitted
  • 1/4 cup almond butter
  • 2 tbsp almond milk
Instructions
  1. In a food processor, add in cookie ingredients.
  2. Pulse until a sticky dough forms.
  3. Press into a small muffin pan lined with parchment paper.
  4. Place in the freezer.
  5. In a food processor, process dates and almond butter until combined.
  6. Add in almond milk a little bit at a time until you get a smooth & gooey caramel.
  7. Layer caramel on top of the base.
  8. Place back in the freezer for 10-15 minutes or until chilled.
  9. Enjoy!
