I was inspired to recreate my childhood favorite PB&J in nice cream form. So here you have a delicious, easy 5-ingredient vegan peanut butter and jelly nice cream sundae. After 2 weeks straight of having smoothies for breakfast every morning, I felt the need to switch up my routine. It was 93 degrees and 71 percent humidity in Hong Kong this morning, so I decided it was time for ice cream for breakfast. PB&J nice cream that is!
I was such a happy camper after devouring this big bowl of banana ice cream. I got a big banana haul and bought like 40 bananas in preparation for all the smoothies and nice cream I’ll be making this week. I waited until they were really brown and spotty before cutting and freezing them, so this nice cream was so naturally sweet that I didn’t need to add any sugar to it! I just drizzled a little bit of coconut nectar on top because I really like the taste.
Nice cream is good for anyone and everyone because it’s completely vegan, gluten-free, dairy-free, and refined sugar-free. The base is just frozen bananas blended until creamy with some vanilla powder or extract. Plus the peanut butter & blueberry jelly on top really makes it taste like a dessert. In under 2 minutes, you can have a big bowl of nice cream ready to be enjoyed!
I honestly stopped eating ice cream for the most part, because nice cream satisfies my cravings! You can mix in all sorts of superfood powders, fresh & frozen fruits, and add-ins for flavors like dragon fruit, mango & fig or cinnamon or even spinach. I’ll still get vegan ice cream as a treat every now and then, especially during the summer. But nice cream is so affordable and easy to make, plus it’s really delicious, healthy, and you can customize it to your liking!
It starts to melt really fast, so I recommend freezing your bananas for at least 24-48 hours before making nice cream. My other tip is to let the bananas thaw a bit before blending them, so that you don’t have to add much water or almond milk to them to help them blend. The more liquid you add, the faster your nice cream will melt!
Of course, when it comes to 90+ degree weather, you can forget about melting being an issue. You just kinda got to let it happen and eat your nice cream as quickly as possibly! I actually stirred the coconut nectar, peanut butter, and blueberry jam with the nice cream before eating it. Of course, that’s after I take all these photos, but just so you know it tastes yummy mixed together! - 5-6 bananas, frozen
- 1/2 tsp vanilla powder
- 1 tsp coconut nectar
- 1 tbsp peanut butter
- 1 tbsp blueberry jam
- Add frozen bananas and vanilla to a high-speed blender or food processor.
- Blend until smooth and creamy, adding water a little bit at a time if needed to help it blend.
- Scoop into a bowl with an ice cream scoop.
- Top with coconut nectar, peanut butter & blueberry jam.
- Stir toppings through the nice cream and dig in!
