Another day, another bowl of nice cream! This time, I was super excited because I got some fresh dragon fruit at the market to use in my nice cream. As you all know, I’m addicted to nice cream because it literally tastes like ice cream but is even better because it’s completely raw and vegan. It’s made from only frozen bananas, plus whatever other fruits you want to throw in. Top it with rawnola, and there you have it! The breakfast of champions.
For passion fruit nice cream, I blended a bunch of frozen bananas with passion fruit, raspberries, and mango. If all your fruit is frozen, then it will come out nice and creamy like ice cream. I add coconut water a little bit at a time just to help it mix together faster. But if you don’t have coconut water, any type of plant-based milk would work!
I eat a big bowl of nice cream with rawnola for breakfast every day. It’s become a little bit of a routine of mine. In case you’re wondering, no I never get sick of it! Sometimes I’ll even have it twice in a day, for breakfast and dessert, depending on what mood I’m in.
I really hope you all love nice cream as much as I do, because you can expect lots more to come. I’m in fruit paradise here in Hong Kong. I live with my boyfriend on Hong Kong Island in the Wan Chai neighborhood, which means we’re halfway between two really popular outdoor markets. There’s the Wan Chai market and Causeway Bay market, both of which have food stalls overflowing with the most colorful, vibrant fruit.
They have the biggest selection of fruit I’ve ever seen, from mango to dragon fruit to grapes to cherries to apples. Seriously they have everything you could ever imagine. There’s even some fruit I’ve never tried before! Since we’re in southeast Asia, there’s an abundance of the freshest fruit from nearby Thailand and the Philippines. I’m excited to try it all and experiment with different nice cream flavors.
Another reason why I’m all about nice cream right now is because it’s so hot and humid here. Coming from Atlanta, I thought I was prepared but quickly I’ve realized I wasn’t. The first morning that I went running I could barely make it through a full 30 minutes and felt like I was going to pass out! Luckily, I’ve figured out I just need to drink way more water throughout the day. Nice cream definitely helps cool me off, keeps me hydrated, and tastes so refreshing. - 2 cups bananas, frozen
- 1/3 cup mango, frozen
- 1/4 of a whole dragon fruit
- 1/4 raspberries, frozen
- 1/4 cup coconut water, as needed
- 1/2 cup rolled oats
- 8 Medjool dates, pitted
- 1 tbsp coconut sugar
- 1 tsp cinnamon
- In a high-speed blender or food processor, add all fruit and process until well combined.
- Add in coconut water a little bit at a time until smooth and creamy.
- Scoop into a bowl.
- Add all ingredients to a high-speed blender and blend on high until well combined.
- Sprinkle on top of your nice cream.
- Dig in!
