Think of these as raw peanut butter cookie dough rolled in cinnamon. Basically, that’s exactly what came to mind when I took a bite into these cinnamon peanut butter bliss balls. Easily made gluten-free & vegan, bliss balls or energy bites are the perfect healthy treat to keep stocked in your fridge. They’re a bite-sized snack that will give you the energy boost you need to keep going all day long. Bliss balls are especially great for anyone with a sweet tooth because they’ll satisfy you’re craving but are made with zero refined sugar! Fancy that, now you just have to try them.
Peanut butter can make any day better. It’s like a full-proof cure for life’s worries. Seriously, it’s so yummy sometimes I just eat it by the spoon-full. Please tell me I’m not the only one who does this! Anyways, if you like peanut butter (let’s be real, who doesn’t like peanut butter) then I can guarantee these peanut butter balls will be your new favorite. It’s like you’re eating peanut butter cookie dough, but for some reason it just seems much more acceptable in bite-sized ball form.
I’m a major snacker, like really I eat every couple of hours. It’s just how my body works, and if you’re like me then you’ll want to keep your fridge stocked with these bliss balls. They’re perfect for on-the-go, so you can stick them in your purse or lunch box to have any time you want. I hate going out without taking my own snacks because especially here in Atlanta there’s usually not vegan options! So, I am always sure to keep these bliss balls handy to be on the safe side.
I’ve officially added these to my ongoing list of bliss balls: carrot cake, almond butter & coconut, and vanilla maca are the other flavors I make regularly. What really got me hooked on them is how simple they are to make. All you do is throw a couple of ingredients in a blender or food processor, roll them into balls, and then stick them in the fridge or freezer. They’re so easy kids could even make them.
As if you need any more reasons to join the bliss balls bandwagon, these are also a much better alternative to packaged snacks like the hundreds of brands of granola bars, protein bars, or other snacks you find at the grocery store. Those on the shelves usually are packed with preservatives or additives and contain loads of sugar. I have yet to find a snack that rivals these bliss balls when it comes down to health and taste.
Ever since I discovered bliss balls, I stopped buying packaged snacks which saves me both time and money. I pop a couple of bliss balls before or after a workout or between meals when I want a treat to tie me over. You’d be surprised how filling and satisfying they can be. - 1 cup almonds
- 1/2 cup dates, pitted
- 1/4 cup peanut butter
- 1/4 cup coconut sugar
- pinch of salt
- 2 tbsp almond milk, as needed
- 1 tbsp cinnamon (for rolling)
- Add almonds to a high-speed blender or food processor and process until you get a flour-like consistency.
- Add dates, peanut butter, coconut sugar, and salt.
- Process until well combined.
- Add almond milk as needed until you get a sticky ball of dough.
- Place cinnamon in a small bowl.
- Scoop out dough by the spoon-full and roll into balls between your hands.
- Roll bliss balls in cinnamon.
- Place in the fridge or freezer for 30 minutes to set.
- Snack away!
