I’ve become obsessed with chia seed jam lately. I made a big batch of blueberry chia jam earlier and had it just sitting in my fridge. I used it occasionally to make PB&J sandwiches during the week, but had some leftovers. As I always do on Sundays, I wanted to clean out my fridge. So I thought I’d make these blueberry jam crumble bars. They’re like a blueberry crumble in bar form, with naturally sweetened oats as the base layered with jam and topped with an oat crumble.

Vegan, gluten-free, and oil-free, these oat bars are a delicious healthy breakfast.

A great plant-based dessert when you want something warm and filling. I was snuggled up all weekend craving comfort food and these bars reminded me of the blueberry pop-tarts I used to chow down on as a kid. Except they are way better for you and for your body, full of only natural, whole foods.  

There’s something really satisfying about baking during the winter.

First off, I loved the smell radiating from the oven when I made these bars. And then I dug right into them while they were still warm, instead of waiting for them to cool like I should’ve done. They were perfectly sweet and the best mixture of chewy and crunchy.

Sure, there’s extra effort to put into baking but I promise it’s totally worth it. I also promise that I made these crumble bars as simple as possible, so you don’t need to stress. For the blueberry jam, all you need are 3 ingredients: blueberries, chia seeds, and maple syrup. Blend them all together and then let it sit it the fridge to thicken up!

These bars turned out so yummy that I couldn’t help but eat almost all of them in one sitting.

No joke, I only have two of them left that are sitting in my fridge begging to be eaten. But if you have more self-restraint than me, then you can store these in the fridge to snack on throughout the week! That’s why I like baking on the weekend, because then I have healthy treats ready for me when I need to grab them and go.I think it’s safe to say you can throw out your nutrigrain bars and pop-tarts and replace them with these instead.

Blueberry Jam Crumble Bars

Delicious vegan crumble bars that are naturally sweetened and gluten-free. Oat base layered with 4-ingredient blueberry chia seed jam!

Ingredients

For the blueberry chia jam

  • 2 cups blueberries
  • 2 tbsp maple syrup
  • 1 1/2 tbsp chia seeds
  • 1/2 tsp vanilla extract

For the crumble bars

  • 1 chia egg
  • 6 tbsp applesauce
  • 2 tbsp maple syrup
  • 1 tbsp brown rice syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 1/4 cup rolled oats
  • 3/4 cup oat flour

Instructions

For the blueberry chia jam:

  • Preheat oven to 200 degrees Celsius.
  • In a high-speed blender, blend blueberries, maple syrup, and vanilla extract until smooth.
  • Stir in the chia seeds and transfer to a jar.
  • Place in the fridge to thicken.

For the crumble bars:

  • In a mug, mix together the chia seeds and water.
  • Set aside for 5 minutes to thicken.
  • In a medium-sized bowl, mix together the applesauce, maple syrup, brown rice syrup, chia egg, cinnamon and vanilla extract until well combined.
  • Add in the rolled oats and oat flour and stir until evenly coated.
  • Line a small loaf pan with parchment paper.
  • Spoon 2/3 of the oat mixture into the bottom of the pan.
  • Flatten it by pressing firmly down with the back of a spoon until it’s even.
  • Pour the blueberry chia jam on top of the oat base and spread out evenly.
  • Crumble the remaining 1/3 of the oat mixture on top of the jam.
  • Bake for 25-30 minutes until the oats on the top are slightly browned.
  • Let cool for 20-30 minutes before slicing into bars.

Notes

Make a chia seed egg by mixing 1/2 tbsp chia seeds and 2 tbsp water.

    Nowhere in the recipe does it say to add the chia egg in. I’m assuming it’s before the oats?

      Thanks for catching that Amanda! I just updated the recipe. Yes, you add the chia egg in with the rest of the wet ingredients before adding in the oats. I hope you enjoy these oat squares!

      Hi Hillary! Yes, you can use frozen blueberries. I just recommend letting them thaw a bit before blending them so that you get a nice & smooth consistency 🙂 I hope you enjoy this recipe!

      Hi Katie! I’m so happy you found me, yay!! These jam squares are so good, your friends won’t even believe they’re healthy 🙂 You can substitute the brown rice syrup with any liquid sweetener (maple syrup, coconut nectar, etc.)!
