My biggest pet peeve is when granola bars are too dry, leaving you dehydrated. So I made sure that these had such a soft, gooey texture to them. Plus, they’re really satisfying since they’re all-natural. Usually granola bars leave me wanting more, but one or two of these squares had me full for hours.

Banana Bread Granola Bars
Ingredients
- 2 cups gluten-free rolled oats
- 3 large ripe bananas mashed
- 1/4 cup brown rice syrup
- 1/2 cup Medjool dates pitted
- 2 tsp cinnamon
- 1 tsp vanilla extract
- pinch of sea salt
Instructions
- Preheat oven to 200 degrees celsius.
- In a medium-sized mixing bowl, add mashed bananas, brown rice syrup, and vanilla extract.
- Mix until well combined.
- Add in remaining ingredients and mix until fully incorporated.
- Line a 8×8 baking pan with parchment paper.
- Pour the mixture into the pan and smooth it out evenly.
- Bake for 30 minutes, until edges are slightly browned.
- Remove from the oven and let cool for 15 minutes before cutting into squares.
