I’m bringing back the avocado toast! I took a brief hiatus from having avocado toast for breakfast because I could not for the life of me find a good vegan & gluten-free bread here in Hong Kong. Then, last week I was feeling really under the weather and literally all I wanted to eat was toast. I was craving a warm piece of toast with avocado and sweet potato (a.k.a. loads of good carbs!). I trekked all the way to the health foods store in Central district and to my surprise they had a new vegan & gluten-free loaf of bread! My dream came true: I finally got to have avocado toast with sweet potato & tahini for breakfast.
This has to be the most satisfying breakfast ever, especially during winter. I don’t even have a toaster, so I heated up the bread on a frying pan with no oil, just straight up bread on the pan. It worked and in a minute or two, the smell of fresh toast was wafting through my apartment. That smell alone was enough to make me drool!
I was so excited to have perfectly ripe avocados handy. I quickly cut it open and generously slathered the avocado on my toast like it was butter. Side note: avocado is a great vegan alternative for butter. I happened to have leftover baked Japanese purple sweet potato from dinner the night before, so I sliced it up into little pieces and arranged them on top of the avocado.
The best topping in my opinion that really makes the perfect avocado toast is tahini. If you’ve never tried it, tahini is just ground up sesame seeds. It’s like a nut butter almost, but it’s made from seeds instead of nuts. I got a locally produced jar full of pure raw tahini with no added oil in it, which was super creamy and so smooth. I drizzled it straight from the jar directly on top of my toast.
I ended up sprinkling on a pinch of pink Himalayan sea salt for the finishing touch. The final result was toast heaven in my opinion. It’d been so long since I last had toast, I felt like I had been seriously missing out. I will never go another week or even two days without avocado toast from now on.
I definitely recommend heating it up after you make it, just a couple of seconds in the microwave until it’s warm. That’s the best way to enjoy it in my opinion! This toast is completely vegan & gluten-free, but not only that it’s also a delicious breakfast, lunch, or afternoon snack. I can’t tell you enough how life changing avocado toast is with sweet potato & tahini!
- 1 slice of vegan & gluten-free bread
- 1/2 of a ripe avocado
- baked sweet potato
- 1 tsp tahini
- pinch of pink Himalayan sea salt
- Toast your bread until lightly browned on both sides & crispy.
- Slice avocado and spread it on top of your toast with a knife.
- Cut up baked sweet potato into small pieces and place on top of your avocado.
- Drizzle with tahini.
- Sprinkle on sea salt.
