I’ve got a serious obsession with eating raw cookie dough. It started way back when I was a kid, sneaking bites of Pillsbury ready-to-bake chocolate chip cookie dough behind my mom’s back. We all know that’s seriously not good for you, so I put together these vegan chocolate chip cookie dough bites. They’re filled with all-natural ingredients like cashew butter, rolled oats, and dates so you can eat them raw without a worry!
These vegan chocolate chip cookie dough bites would be the perfect Valentine’s Day dessert! They’re bite-sized, so you can snack on them while watching a movie, grab a couple after dinner, or even mix some with nice cream to make a cookie dough sundae.
For me, it was a struggle not to just straight up eat the cookie dough out of my food processor. By the time I rolled them into balls, I’d already eaten at least 1/8th of it. But to be honest, I really like sticking these cookie dough bites in the fridge for 1 hour or so to firm up. They taste really good when they’re cold! Unless you’re one of those people that doesn’t like cold chocolate. In which case, store them at room temperature.

- 1 1/2 cup rolled oats, gluten-free if necessary
- 1/4 cup coconut sugar
- 2 tbsp cashew butter
- 1 cup (approximately 300 grams) dates
- 2 tsp vanilla extract
- 1/4 cup dairy-free chocolate chips
- If your dates aren't soft, soak them in boiling water for 30 minutes-1 hour. Drain before using.
- Add rolled oats and coconut sugar to a food processor.
- Process until oats start to turn into a flour-like consistency.
- Add cashew butter, dates, and vanilla to food processor.
- Process until a sticky ball of dough forms. Add a little bit of water, if needed to help it stick together.
- Fold in chocolate chips with a rubber spatula.
- Scoop out by the tablespoon and roll into balls between your hands.
- Refrigerate for 1 hour to set.
