Raw Vanilla Cashew Butter Energy Balls

I really like how simple they are to make. Just 5 ingredients in your food processor, then blend, blend, blend and there you have it! I’ve dedicated a whole drawer in our freezer to storing energy balls (much to my boyfriend’s annoyance). But if you’re like me, you’ll love this delicious, vegan recipe!

I use a trusty mixture of oats and dates, then add in whatever nut butter or spices I want. This time, I went with my favorite locally-made vanilla cashew butter from Nutty Buddy Nut Butters. You can use any cashew butter you want, but if it doesn’t already have vanilla in it then be sure to add in an additional 1 tsp vanilla extract or vanilla powder. The vanilla + cashew butter combo really gives the balls a delicious cake batter taste, which I absolutely love!

I always naturally sweeten my energy balls with a combination of coconut sugar and maple syrup. As you may know, I like my energy balls super sweet so I add coconut sugar and maple syrup. Honestly, I just really like the taste of coconut sugar more than the actual sweetness of it. At least it’s an unrefined sweetener and low-glycemic too. If you prefer them less sweet, then just substitute water for the maple syrup. A liquid is needed to help the energy balls stick together!

Easy, 5-ingredient raw vanilla cashew butter energy balls! A super delicious, vegan snack to grab-and-go.

Serves: 12 energy balls
  • 1 cup rolled oats, gluten-free
  • 3/4 cup medjool dates, pitted
  • 2 tbsp vanilla cashew butter*
  • 2 tbsp coconut sugar
  • 2 tsp maple syrup
  1. Add all ingredients to a food processor.
  2. Process until it comes together and a ball of dough forms.
  3. Use a tablespoon to scoop out dough and roll into balls between your hands.
  4. Place balls on a baking sheet lined with parchment paper.
  5. Store balls in the freezer for 1 hour to firm up.
  6. Remove from freezer and let thaw for 5-10 minutes before eating.
*If you don't have vanilla cashew butter, then add in an additional 1 tsp of vanilla extract or vanilla powder.
*You can store the energy balls in a tightly sealed jar for 5-7 days in the fridge, or for months in the freezer.
