Raw Vegan Cinnamon Peanut Butter Nice Cream

I’ve still managed to bang out my 5 mile daily morning run, but my cravings have slowly but surely started to change. I blame it on the weather (only teasing!). I’ll get more into my appetite changes below, but for the time being I’m loving this easy, 4-ingredient raw vegan cinnamon peanut butter nice cream. It’s a great way to get a healthy, extra dose of protein in post-workout!

The past 2 weeks, I’ve really tried to strictly cut out all processed foods, including cereal, frozen meals, processed snacks, and so on. As I did so, I noticed I’ve really started to crave fruits, vegetables, sushi, and potatoes. But instead of eating 10 or more bananas a day like I used to, my body’s been craving other more citrusy, sour fruits like strawberries, pineapple, mango, and grapes. I used to eat rawnola twice a day too, but now I only have it as an occasional treat. 

I really slacked off over the winter, indulging in an excess of oily foods like pizza, fried rice, and fried dumplings. I ate out a ton, often consuming a lot of gluten in the process. I started to feel excessively bloated and just not good overall. Now that it’s summer, I’ve really started to crave all these whole, plant-based foods again. I guess it’s my body’s way of getting back on track! 

The biggest advice I have for anyone feeling the same way is to listen to your body. Don’t deny it what it craves, but also eat everything in moderation. Be sure to pack in all your daily servings of fruits and veggies, plus healthy carbs which fill you up with energy. Again, it’s all what works for you and this is what works for me. Every person is different! Anyways, enough ranting now onto this delicious, cinnamon peanut butter nice cream treat.

Easy, 4-ingredient cinnamon peanut butter nice cream. This no-churn, vegan ice cream is the perfect treat to help you beat the heat in the summer!

  • 4-5 frozen bananas
  • 2 tbsp peanut butter
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  1. Remove bananas from the freezer and allow to thaw for 10-15 minutes.
  2. Add all ingredients to a food processor or high-speed blender.
  3. Process until it turns into a smooth and creamy consistency. You may need to scrape down the sides occasionally.
  4. Transfer to a bowl or mason jar.
  5. Dig in!
