Festive Friday // Raw Vanilla Caramel Buckwheat Bars

vanilla caramel buckwheat bars // raw, vegan, gluten-free & sugar-free These vanilla caramel buckwheat bars were just what I was wanting this weekend. I basically tossed all of my favorite ingredients in my food processor: dates, vanilla, buckwheat groats, rolled oats, and cinnamon with some almond milk. Then I crossed my fingers and these chewy caramel energy bars were the result!

But I wanted to take them up a notch so I added a gooey, soft vanilla date caramel on the top. Vegan caramel is suprisingly so easy to make at home! All I did was combine dates with almond milk & vanilla and then process them until smooth. 

Like with most food, if you make caramel at home you’ll find that it’s 110% easier to make it much healthier too. The caramel you find at the store is usually full of unnecessary sugars and other processed filler ingredients, but this version is completely clean, vegan, gluten-free, and refined sugar-free. I use date caramel in a bunch of my recipes so I definitely recommend giving it a try if you haven’t already!

Despite having the word “wheat” in their name, buckwheat groats are actually not related to wheat at all and are completely gluten-free and allergy friendly. They’re an amazing source of fiber and are known to be easy to digest, full of vitamins, and great for your skin and hair too.

If I keep a bunch of granola bars, bliss balls, and energy bars like these handy, then I never feel the urge to go out and buy processed snacks or junk food. This has been a major stepping stone for me since going vegan!

RAW VANILLA CARAMEL BUCKWHEAT BARS

Buckwheat caramel energy bars topped with vanilla date caramel! An easy, nutritious snack.

Ingredients
Buckwheat bars
  • 2 cups dates, pitted
  • 1 1/2 cup rolled oats
  • 1/2 cup buckwheat groats
  • 1/4 cup almond milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
Caramel
  • 2 cups dates, pitted
  • 2 tbsp almond milk
  • 1 tsp vanilla
Instructions
For the bars
  1. In a food processor, process dates, oats, and buckwheat groats until a stick ball of dough forms.
  2. All the rest of the ingredients and process, scraping down the sides until well combined.
  3. Press into a loaf pan and place them in the freezer.
For the caramel
  1. In a blender or food processor, process all ingredients until a smooth caramel forms.
  2. Layer the caramel on top of the energy bars.
  3. Place back in the freezer for at least an hour.
  4. Cut into bars and snack away!
