I’ve been craving cookies, the really yummy kind with chocolate chips. So I thought, I might as well combine my two favorite types of cookies to make the ultimate cookie to beat all other cookies. So here’s the result. One bite into these raw, vegan & gluten-free peanut butter chocolate chip cookies and you won’t be able to put them down!
I came up with this very simple recipe for you all that way you can have a no-fuss cookie situation. They’re delicious, super chewy, soft, and packed chalk full of chocolate chips. You only need 5 basic ingredients to put these peanut butter chocolate chip cookies together. Plus, there’s no oven necessary and you can make them in just one bowl!
The best part of raw vegan peanut butter chocolate chip cookies in my opinion is that there’s no eggs, dairy, refined sugars, or flours. Basically, that means it’s completely safe to eat the cookie dough right out of the bowl. When I made them, I loved the cookie dough so much only 60% of it actually ended up as cookies. If you want, you could even just keep it as cookie dough and store it in the fridge.
I packed the cookies with only natural ingredients, so you can enjoy them knowing they’re naturally energy-boosting and full of healthy protein. Since I’m home in Atlanta, my mom was able to act as my taste-tester. I’ve been asking her for the golden seal of approval on all my recipes, and she insisted I post these as soon as possible. She liked them because she said they were super satisfying and so naturally sweet. She couldn’t believe there was no added sugar.
I already had all of the ingredients in my pantry so I didn’t even have to go on a grocery run. You just need rolled oats, peanut butter, dates, vanilla extract, and a dark chocolate bar. These are definitely pantry staples for me, so if you’re wondering what I like to use regularly for my raw desserts there you have it. Everything I make always consists of at least one of those 5 ingredients.
If your parents or friends are cookie monsters like mine, then you should totally make these for them. Don’t even tell them they’re vegan and see what they say. - 1 cup rolled oats, gluten-free
- 1/2 cup raw peanut butter
- 8 Medjool dates, pitted
- 1/2 tsp vanilla extract
- 1 bar of raw chocolate
- Add all ingredients except chocolate into a high-speed blender or food processor.
- Process until well combined and the dough sticks together.
- Carefully chop the bar of raw chocolate into small pieces.
- Gently fold the chocolate into the cookie dough.
- Roll into medium-sized balls between your hands.
- Flatten on a cookie sheet lined with parchment paper.
- Stick in the freezer to set for 1-2 hours.
- Eat them all!
