Say hello to the best energy bars ever! I wanted a quick snack that I could grab on-the-go so I came up with these raw vegan coconut almond butter energy bars. They’re amazingly chewy and filled with date caramel, vanilla, and cinnamon. I even drizzled them with extra almond butter for good measure. You’re welcome!
I used gluten-free rolled oats, shredded coconut, and almond butter to form the base of the bars. Then I tossed in my favorite: fresh ooey-gooey Medjool dates that I picked up at the farmer’s market. If you follow my blog or even if you don’t, you should know that I’m absolutely obsessed with dates and use them in all the raw vegan treats that I make. They added a nice caramel taste and their sticky texture helped hold together the bars.
These energy bars are so tasty and 110% better for you than the processed, pre-packaged ones you find at the grocery store. If you read the labels on there, you’d be surprised by all the unnecessary ingredients they sneak into what they call “granola bars”. That’s why I wanted to make my own.
You’ll never believe how easy they are to make on your own. All you have to do is toss the ingredients in a food processor then stick them in the fridge or freezer to let them set. You’ll have the satisfaction of knowing exactly what goes into them. Plus you’ll be surprised by how much better they’ll taste knowing you were the one that made them!
If there’s one thing I’ve learned when it comes to granola bars, it’s that you really can’t mess them up. So feel free to play around with this recipe and add in more of whatever wholesome, yummy ingredients you have!
I couldn’t help myself. Not only did I add a healthy dose of almond butter into the bars themselves, but also I just had to add some extra on top. Definitely a good decision if you like almond butter as much as I do. Seriously you should see my stock of empty almond butter jars. They take up a whole shelf in my pantry! But I’m a big believer in reusing and recycling so I definitely wanted to save them for future use. Anyways enjoy these bars and let me know what you think!
- 1 1/2 cups rolled oats
- 1 cup Medjool dates, pitted
- 1 cup shredded coconut
- 3/4 cup almond butter
- 3 tbsp coconut nectar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- In a food processor, add oats, dates, and coconut and process until mixed.
- Add in all ingredients and process until well combined (it should be a sticky dough at this point).
- Press into a pan lined with parchment paper.
- Place in the fridge or freezer for an hour or two.
- Slice into bars and enjoy!
