Especially when they’re this healthy, made with only wholesome, all natural ingredients like frozen bananas, rolled oats, cinnamon & vanilla. You don’t need an ice cream maker and the entire recipe is raw, vegan, gluten-free, dairy-free, oil-free, and refined sugar-free. I loved this ice cream sundae so much I made my first ever RECIPE VIDEO to show you how to make it! This creamy, comforting caramely banana ice cream is perfect for the holidays or any day for that matter! It’s sweet and would go great on top of an apple crumble, pumpkin pie, or chocolate brownie. Or, if you’re like me, you’ll enjoy it best on its own with a side of these soft & chewy vanilla oat cookies.

raw vegan cookies & cream nice cream sundae I dipped the cookies in the nice cream like I would with dunkaroos when I was a kid. So basically the cookies ended up being a boat to scoop up the ice cream. It’s the best way to do it in my opinion and the flavors compliment each other perfectly. If you close your eyes, I swear it tastes just like regular cookies & cream ice cream except it’s kinder to your tummy.

raw vegan cookies & cream nice cream sundae For the nice cream, all you need is four basic ingredients: frozen bananas, coconut sugar, cinnamon, and vanilla powder or extract. The trick to getting it really creamy without any added liquid is to let the bananas thaw a bit before trying to blend them. If you still need to, you can add a dash of coconut water, nut milk, or just plain water to help it come together faster. 

raw vegan cookies & cream nice cream sundae I can’t decide which part is more delicious: the vanilla cookies or the nice cream. I really think it’s the combination that’s so good. I even made a couple of nice cream sandwiches with the leftover cookies by scooping up the nice cream, sandwiching it between two cookies, and freezing them for an hour.

They’re really soft, so it’s best to freeze them and then let them sit for 5 minutes at room temperature before eating them. Trust me, they taste better nice and cold anyways. Creamy, healthy cookies & cream ice cream sundae. A caramel cinnamon flavored banana ice cream base with the best vanilla oat cookies. Completely raw and vegan!
Recipe type: Dessert
Cuisine: Raw, Vegan, Gluten-free, Refined Sugar-free, Oil-free
For the vanilla cookies
  • 1 1/2 cup rolled oats
  • 1/2 cup buckwheat flakes
  • 1/2 cup brown rice syrup
  • 1 tsp vanilla powder
  • 2 tsp cinnamon
  • 4 Medjool dates, pitted
For the nice cream
  • 5 bananas, chopped and frozen
  • 1 tbsp coconut sugar
  • 1 tsp vanilla powder
  • 2 tsp cinnamon
  • 1 tsp coconut nectar
  • a handful of buckwheat groats
For the vanilla cookies
  1. Place oats, buckwheat flakes, vanilla, cinnamon & salt in a food processor and process until broken down.
  2. Add brown rice syrup and dates and pulse until a sticky ball of dough forms.
  3. Scoop out by the tablespoon and place onto a cookie sheet lined with parchment paper.
  4. Flatten the cookies with the back of a spoon or your hands.
  5. Freeze for 30 minutes - 1 hour.
For the nice cream
  1. Add all ingredients to a high-speed blender or food processor.
  2. Process on high until smooth and creamy.
  1. Scoop nice cream into a bowl.
  2. Drizzle on the coconut nectar, or any liquid sweetener.
  3. Top with cookies and buckwheat groats.
  4. Dig in!
