Festive Friday // Coconut Kettle Corn

Coconut Kettle Corn Snack attack! I don’t know about you, but I am the biggest snacker. I get these major mid-afternoon cravings where literally all I want to do is snack. So, I’ve come up with this healthy recipe for oil-free popcorn that’s perfect for when the hunger strikes.

Coconut Kettle Corn Popcorn is naturally gluten-free, and can easily be made vegan at home. I opted out of using oil, instead simply air popping the corn kernels to keep it even healthier.

You don’t even need one of those old-fashioned popcorn makers or a microwave. You can just do it in a pot over the stove. It’s like magic!

Coconut Kettle Corn Ingredients I decided on kettle corn because it was always my favorite growing up. My mom and I would make big bowls of it for family movie nights on the weekend.

I guess you could say I’m feeling a little nostalgic. And with the Oscars coming up, I thought what better way to celebrate than by recreating kettle corn without using any of the refined sugar it usually has.

Coconut Kettle Corn The combination of coconut nectar + coconut sugar gives it just the right sweetness.

If you haven’t tried coconut nectar before, it’s raw, vegan, gluten-free, and fat-free with a really low glycemic index. Plus it’s packed with amino acids, vitamins, and minerals! I really like the taste more than other liquid sweeteners and it’s a great raw vegan alternative.

Coconut Kettle Corn Four ingredients and 5 minutes is all it takes to make this big heaping bowl of popcorn. It’s definitely enough for 2 people to share, but I easily go through it on my own. After all, I’m the queen of snacking.

This is the perfect recipe for a movie night, an easy snack, or a get together with friends. I’m making it for the Oscars viewing party my girlfriends are throwing in a couple of weeks.

Coconut Kettle Corn Popcorn is such a crowd pleaser. I seriously don’t know anyone who doesn’t like it and it’s also very budget friendly. So, next time you’re reaching for the prepackaged popcorn bags at the grocery store, just go for the corn kernels instead. Try it and you’ll see how much of a game changer it is!
