Ah yes, it’s the weekend. What better way to spend it than by baking cookies? I am so excited to share these blueberry oatmeal raisin cookies with you all. I made them with only 5 vegan & gluten-free ingredients. There’s no added sugar or oil either so you can enjoy them as a healthy dessert or breakfast treat!
These cookies are a variation on my 4-ingredient banana bread breakfast cookies. You probably already have the ingredients for these lying around, making it a no-fuss baking situation.
No eggs, no dairy, no sugar, no gluten, no nuts or seeds. All you need is some ripe, spotty bananas and rolled oats for the base. Then you add in the cinnamon, blueberries, and raisins. I left out any nut butter or oil because I wanted them to be lower in fat. The bananas and oats kept the cookies together well so there was no need for any other binders.
I believe you can never have too many cookie recipes, especially when they’re this easy and healthy. So I was happy to add this one to my collection and I hope you are too!
I grew up loving homemade oatmeal raisin cookies fresh out of the oven. Really, I loved any cookie for that matter. So the idea of taking the classic oatmeal raisin cookie, making it much more nutritious, and giving it a little twist by adding blueberries really excited me.
I was beyond happy with the result. There’s nothing better than the smell of your kitchen after baking cookies. And I just love the smiles on everyone’s faces (in this case, it was my own) when they bite into a deliciously warm, chewy cookie.
If you want to try this recipe out with other berries, be my guest. I’m sure the cookies would turn out just as stellar! I couldn’t think of a better way to spend the weekend than by experimenting in the kitchen. I’m my own recipe tester, so that means lots of cookies for me! No complaints there.
I really like having a full plate of cookies to snack on while I watch the new episode of Game of Thrones every Sunday. - 1 cup rolles oats
- 2 ripe bananas
- 1/3 cup raisins
- 1/3 cup blueberries, fresh or frozen
- 1/2 tsp cinnamon
- Preheat your oven to 350 degrees Fahrenheit.
- In a small bowl, mash the bananas with a fork.
- Add in the oats and cinnamon and mix until well combined.
- Fold in the raisins and blueberries.
- Using an ice cream scoop, scoop out dough and flatten on a baking sheet lined with parchment.
- Bake for 13-15 minutes or until golden.
- Eat them all!
