Festive Friday // Banana Cinnamon Oatmeal

It’s super easy to make vegan & gluten-free oatmeal with only a couple of natural, wholesome ingredients. I’ve always been more of an overnight oats girl myself, but in the spirit of change and wanting to try something new I decided to make stove-cooked oatmeal this time. I went with banana cinnamon oatmeal because it’s always been my favorite flavor so I thought it was a safe bet. Boy oh boy was I right!

Sure it’s summer still, but I really don’t mind cuddling up to a nice warm bowl of oatmeal in the morning. This banana cinnamon oatmeal will really fill you up, energize your body, and keep you going all day. It’s my new go-to breakfast when I know I have a long day ahead of me. 

banana cinnamon oatmeal // vegan, gluten-free, refined sugar-free I used gluten-free rolled oats mixed with coconut water and a little almond milk for the base to make it nice and creamy. Then, I added in mashed banana, cinnamon, and coconut sugar. The result was seriously so yummy that I easily gobbled up the entire bowlful.

For banana cinnamon oatmeal, I strongly suggest sliced banana, coconut sugar, and coconut nectar which is what I used. On top of the warm oatmeal, you can see the coconut sugar melt and caramelize a little bit making it even more delicious! 

banana cinnamon oatmeal // vegan, gluten-free, refined sugar-free I use coconut sugar and coconut nectar as a natural sweetener in most of my recipes because it’s completely raw, vegan, gluten-free, unrefined, and low glycemic. It has a bit of a caramel flavor to it that I fancy, plus it doesn’t spike your blood sugar levels meaning you won’t go on a sugar high and then crash. It’s an all-around great choice for an unrefined sweetener!

It’s known to help prevent heart disease and is packed full of iron, magnesium, and vitamins. This banana cinnamon oatmeal is high in carbs, low in fat, and full of plant-based deliciousness! Healthy & nutritious banana cinnamon oatmeal! A complete vegan and gluten-free, comforting breakfast option.

Ingredients
  • 3/4 cup coconut water
  • 1/2 cup rolled oats
  • 2 tbsp almond milk, unsweetened
  • 1/2 ripe banana, mashed
  • 2 tbsp coconut sugar
  • 1/4 tsp cinnamon
Toppings:
  • 1/2 ripe banana
  • 1 tsp coconut nectar
  • sprinkle of coconut sugar
Instructions
  1. Place coconut water and almond milk in a medium sized pot.
  2. Bring to a boil.
  3. Stir in oats, banana, coconut sugar, and cinnamon until well mixed.
  4. Turn heat down to a simmer and cook for 10-15 minutes, until oats reach desired consistency.
  5. To serve, spoon oatmeal into a bowl.
  6. Top with banana slices, coconut nectar, and coconut sugar.
  7. Enjoy!
