I’m having a party with my avocado toast! If you’re wondering what I’m celebrating for this week’s festive Friday, it’s whoever the genius was who came up with this combo. Seriously, hats off to you. I took my avo toast to the next level by adding a creamy cilantro avocado tahini dressing and hemp seeds.
For the dressing, you only need 5 simple ingredients: avocado, tahini, lemon, cilantro, and a little bit of salt. All you have to do is toss it all in a blender or food processor with some water. You’ll end up with a deliciously creamy green dressing that is great to use in salads, macro bowls, brown rice pasta, or on toast.
This recipe makes more than enough dressing so you can store it in a jar and save it for later. It’s raw, vegan, gluten-free, oil-free, and packed with greens. Basically the point I’m getting at – the dressing is super healthy and nourishing, just the way I like it.
The key to an amazing avocado toast is of course a perfectly ripe avocado. But what makes it even better is the toppings you add. I put 1/4 of a large avocado on each of my two slices of gluten-free & vegan bread, then drizzled the dressing on top along with some hemp seeds, cracked pepper, and salt. The options for toppings are endless so have fun with it!
For me, the reason why I find avocado toast so amazing is it really fills me up. Especially in the morning, I always feel satisfied and nourished after a good avo toast or two. I mean come on, just look at it. Doesn’t it scream “eat me”!
I’m definitely not opposed to having avo toast for lunch or dinner either. To me, it’s good enough to be an all-times-of-day meal or even mid-afternoon snack.
Another big plus for this avocado toast: it takes less than 10 minutes to prepare and only a few ingredients. I’m all for easy, quick meals and this one is at the top of my list. So my final question for you is, how do you like your avocado toast?
- 1/4 cup tahini
- 1 large avocado
- 1 large lemon, juiced
- 1/4 cup water
- 1/4 cup cilantro
- 1/4 tsp pink Himalayan salt
- 2 slices of gluten-free bread
- optional toppings: hemp seeds, black pepper, salt
- Blend 1/2 avocado and all other ingredients except water in a blender until smooth.
- Add water a little at a time until you reach desired consistency.
- Toast your bread.
- Top with 1/2 avocado.
- Drizzle with the dressing and sprinkle with hemp seeds (or any other yummy toppings!).
