Festive Friday // Almond Butter Stuffed Raweos

almond butter RAWEOS // raw, vegan, gluten-free, refined sugar-free Ever since I first set eyes on a RAWeo (raw + Oreo = raweo), I’ve wanted to recreate my own version. It’s a genius idea: take two raw, vegan, gluten-free, and refined sugar-free Oreo cookies and sandwich them with some sort of vegan “cream”. I’ve seen a couple of variations of raweos but wanted to make mine stand out. So I thought, what better combination than raw chocolate and almond butter? So here you have it, my very own almond-butter stuffed raweos.

I can’t even put into words how perfectly chocolatey, chewy and satisfying these are. I had one, then another, then another. I think you see where this is going.

almond-butter-raweos-graphic What’s even more mind blowing is these raweos are completely raw, vegan, gluten-free, and refined sugar-free. All you need is a handful of plant-based ingredients and you’re on your way to recreating a much healthier version of one of my favorite childhood snacks. 

almond butter RAWEOS // raw, vegan, gluten-free, refined sugar-free It all starts with the raw chocolate cookies made from rolled oats, dates, raw cacao powder, raw almond butter, and coconut nectar. Of course, basically all my desserts have dates in them because they’re sticky, naturally sweet and gooey. This means they’re perfect for holding raw treats together, especially cookies.

almond butter RAWEOS // raw, vegan, gluten-free, refined sugar-free I usually go with coconut nectar as the unrefined liquid sweetener in my recipes because it’s a tasty, low-glycemic option for anyone avoiding processed sugar. But feel free to try it out with other liquid sweeteners and let me know how it goes. I’m sure it would work out splendidly!

almond butter RAWEOS // raw, vegan, gluten-free, refined sugar-free Anyone who’s tried raw cacao powder knows it’s the best way to add chocolate into raw vegan desserts. Cacao beans are ground up to make raw cacao powder, so in simple terms it’s chocolate in its purest form without any added sugar or dairy. Raw cacao also happens to be chalk full of antioxidants that’ll give you a boost of energy.

If you have a major sweet tooth like me, these are for you. I had my mom try them and she commented that they’re so rich and filling, leaving you satisfied instead of craving more sweets. ALMOND BUTTER STUFFED RAWEOS

Simple, 6-ingredient raw vegan oreo chocolate cookies sandwiched with creamy almond butter!

Ingredients
Chocolate cookies
  • 1 cup dates
  • 1/2 cup rolled oats
  • 2 tbsp raw cacao powder
  • 1 tbsp almond butter
  • 1 tbsp coconut nectar
Filling
  • 1/2 cup almond butter
Instructions
  1. Add rolled oats to a high-speed blender or food processor and process into a flour-like consistency.
  2. Add all the other ingredients and process until a stick ball of dough forms.
  3. Scoop out by the spoonful and roll into balls with your hands.
  4. Place on a cookie sheet lined with parchment paper.
  5. Flatten balls into cookies.
  6. Stick them in the freezer for 10-15 minutes.
  7. Take cookies out of the freezer.
  8. Spread the almond butter onto half of your cookies.
  9. Place the other half of the cookies on top of the ones with almond butter to form raweos.
  10. Enjoy!
