Can you believe there are only 27 days until Christmas? I know, where has the time gone? Seriously, I can barely believe it. I feel like I just cooked us an epic vegan Thanksgiving feast. We just put up and decorated our Christmas tree with all our ornaments. We just got all our Christmas candles and bath bombs out. Now, it’s just a little over 3 weeks until the big day! Which means, I’ll be in the kitchen non-stop baking, because nothing says “happy holidays” more than freshly baked treats. 1. Vegan Brazil Nut Banana Bread
I’ve never been one to pass up banana bread. Ever. It was one of the first vegan things I ever learned how to make. Now, I go back to it time and time again, because it’s simple yet fun to mess around with. I love the idea of this vegan brazil nut banana bread sweetened naturally with maple syrup and sprinkled with chopped brazil nuts and dark chocolate.

2. Vegan Almond Banana Bread
This vegan almond banana bread is more than it looks. It’s got coffee baked into it, which I think is a super cool twist on traditional banana bread. In addition to almonds and pecans, this nutty banana bread mixes almond extract with shredded coconut and maple syrup. I think the result is pretty spectacular!

3. Vegan Sweet Potato & Cinnamon Breakfast Bread
Maybe the most unconventional of the bunch, this vegan breakfast bread combines two of my favorite things: sweet potato and cinnamon. I don’t know why I’ve never thought to try this combo out before, but I’m super excited about it! I love cinnamon. It’s absolutely my favorite spice. As for the sweet potato, I believe it’ll almost be like a pumpkin bread. I can’t wait to try it!

Speaking of sweet potato, here’s another delicious vegan sweet potato bread made with grated carrot, spelt flour, ground cinnamon, nutmeg, and coconut sugar just to name a few ingredients. It’s got a carrot cake meets sweet potato bread vibe to it, which I totally dig.
